Step-by-step preparation
STEP 1

To prepare the perfect holiday Easter cakes, we prepare the necessary products.
STEP 2

Pour five hundred milliliters of milk with a fat content of at least three and a half percent into a measuring mug, then add fifty grams of fresh pressed yeast to the mug.
STEP 3

Pour about fifty grams of sugar into a mug with milk and yeast.
STEP 4

Add two full tablespoons of flour to the mug.
STEP 5

Mix all the ingredients well in a mug and set it aside for fifteen minutes to activate the yeast.
STEP 6

Place one hundred and eighty grams of soft butter in a large enamel bowl.
STEP 7

Pour two hundred and fifty grams of sugar into a bowl.
STEP 8

Add one teaspoon of vanilla sugar and one third of a teaspoon of salt to the bowl.
STEP 9

Separate the whites from the yolks and add six egg yolks to the bowl.
STEP 10

Mix all ingredients well in a common container.
STEP 11

Pour the prepared dough into a bowl with the egg mixture.
STEP 12

Mix all the ingredients together in a common container.
STEP 13

Add one hundred and fifty grams of 15% sour cream to the basin.
STEP 14

Also mix all the ingredients well together.
STEP 15

Pour forty grams of edible poppy seeds into a basin.
STEP 16

Grate and add lemon zest to taste.
STEP 17

Place one hundred and twenty grams of candied fruits in a bowl.
STEP 18

Add one hundred and twenty grams of chopped dried apricots to the basin and mix all the ingredients together.
STEP 19

Part by part, pour nine hundred grams of pre-sifted flour into a common container.
STEP 20

Mix the liquid base with flour and knead the dough.
STEP 21

We continue to thoroughly knead the dough with our hands for about ten to fifteen minutes.
STEP 22

Sprinkle the dough in a bowl with flour and cover it with a kitchen towel and leave it in a warm place for an hour and a half.
STEP 23

After some time, knead the dough in the basin very well, remove the accumulated carbon dioxide from it and saturate it with oxygen.
STEP 24

We spread the dough in the required quantity into the prepared forms, then add a little vegetable oil to the top of the forms and level it with a spoon, then cover with a towel and leave to rise.
STEP 25

After fifty minutes, put the pans with Easter cakes in the oven, which was preheated to one hundred and fifty degrees for fifty-five minutes, then turn off the oven and let the Easter cakes stand in it for another five to seven minutes.
STEP 26

Taking the cakes out of the oven, decorate them with the prepared protein-custard cream (recipe for making the cream under the video).
STEP 27

We also decorate the top of the Easter cakes with various roses, figures and confectionery toppings to suit your taste.
