First of all, we prepare the necessary ingredients to prepare an incredibly tender and airy homemade cake.
STEP 2

To further prepare the filling, place three hundred grams of thawed fresh pitted cherries in a suitable bowl, then pour one tablespoon of sugar into the bowl, pour one hundred milliliters of cognac into it and mix all the ingredients together, then set the bowl aside and infuse the cherries with cognac.
STEP 3

Break seven chicken eggs at room temperature into a large bowl and add a pinch of salt to it, then beat with a mixer until light foam.
STEP 4

Pour six tablespoons of sugar into a bowl with eggs in two additions and continue beating with a mixer until a fluffy white mass is obtained for ten minutes.

Pour one hundred and thirty grams of premium wheat flour into a deep bowl, then add fifty grams of cocoa powder to it and mix well.

Take a fine sieve and sift the cocoa and flour mixture in several additions into the bowl with the egg mixture.

After one hour, remove the prepared sponge cake from the oven and release it from the mold, then cut off the cake one and a half centimeters thick on top.

Select a small layer of biscuit core and place the crumbs in a deep bowl, then form sides one and a half centimeters wide.

Take a bowl of infused cherries and coat the inside of the entire sponge cake with syrup to ensure it is moist and flavorful.

To prepare the cream, place two hundred grams of condensed milk in a deep bowl, then pour two hundred grams of melted butter into the bowl and mix well until smooth.

Place the cherries in the bowl with the cream mixture and stir all the ingredients together until smooth.
STEP 14

Place the resulting homogeneous mass in a bowl with biscuit crumbs and mix all ingredients thoroughly until smooth.
STEP 15

Take the ring from the mold and put it on the sponge cake, then spread the prepared filling into it in an even layer and press lightly with a fork.
STEP 16

Cover the top of the sponge cake with the filling with the previously cut sponge cake layer and place the pan in the refrigerator for two to three hours.
STEP 17

Take a saucepan and place it on the stove, then pour one hundred and fifty milliliters of 33% cream into it, pour in thirty grams of sugar, then stir and dissolve the sugar in the heated cream.
STEP 18

Remove the saucepan from the stove and place two hundred grams of dark chocolate with nut pieces into it, then mix all the ingredients until a thick and homogeneous chocolate mass, then add thirty grams of softened butter to the saucepan and mix all the ingredients thoroughly again.
STEP 19

Place the cake on a plate and pour the uniform cooled glaze from the saucepan onto it, which then spread in an even layer.
STEP 20
