Dried fruit cake

Ingredients
Step-by-step preparation
STEP 1

Cut the prunes (not finely, I usually cut them into 4 parts)
STEP 2

Chop the dates (not finely, I usually cut them into 4 pieces)
STEP 3

Pour hot tea over raisins, dates and prunes for at least half an hour.
STEP 4

Beat eggs with powdered sugar.
STEP 5

Mix dry ingredients (flour, cinnamon, ginger, baking powder)
STEP 6

Strain the dried fruits. Attention! 150 ml of strained tea is needed for the test!!!
STEP 7

Sift the dry mixture into the egg mixture. Mix carefully. The dough will become quite elastic. If it's hard to mix, don't worry.
STEP 8

After adding the soaked dried fruits and strained tea, stir. The dough will resemble thick sour cream.
STEP 9

Line the mold with baking paper. Lay out the dough. Bake at 175 C for 40-60 minutes. depending on the oven and shape. Do not open the oven for the first 30 minutes (the cake may settle). After 30 minutes, you can check the cake with a toothpick for doneness. I have a mold with a diameter of 26 cm. The oven bakes from above and below. Usually bakes for about 50 minutes.
STEP 10

Cool the finished pie. Select from form. Sprinkle with powdered sugar if desired.
