Today, the sight of a pumpkin got me into a summer mood! And the baked goods made from it are sunny and delicious. Delicious pumpkin cookies made from pumpkin in the oven are an orange miracle, simply created for pleasure! I used whole grain flour, it slightly changed the color of the dough, but it was healthier. The cookies turned out crispy on top and soft inside. I drank coffee with them and was simply blown away!

I'm actually not a pumpkin fan. And the children, looking at me, don’t really like her. But the product is useful! Therefore, sometimes I look for some recipe where the pumpkin is “disguised” and am glad that we are eating it, which is healthy. Well, of course, I couldn’t pass up the recipe for these pumpkin cookies. I just prepared a lean version of this cookie - I replaced the butter with vegetable oil, and the egg with chia seeds (one tablespoon of seeds crushed in a coffee grinder, poured with four tablespoons of water and left for 5 minutes). I combined all the ingredients together and mixed well, and then added flour and baking powder. I ended up with a dough that had an unusual consistency - it seemed too soft, but at the same time it didn’t spread. The cookies could be formed with wet hands, but I simply scooped the mixture onto a baking sheet using a spoon. Bake for 10-12 minutes. The result surprised and pleased. Probably, with my substitution of products, the cookies turned out to be completely different from those in the author’s recipe. But I really liked it, so I decided to share my photo report. First of all, there is very little pumpkin flavor in the cookies. Secondly, although it is lean, it is very tasty. I completely trust the author, I will definitely bake pumpkin cookies with eggs and butter, as in the recipe. But, most likely, I will not add coconut flakes and vanilla sugar, but some spices - cinnamon, nutmeg, etc. But I will also prepare a lean version, only next time with some filling, for example, cherries or walnuts.
