Dance Peach

An incredibly delicious dessert with the most delicate sponge cake and airy cream! Tasty. I came up with this Peach dance myself. I made it in parallel with the strawberry one. The taste turned out completely different.

It looks delicious and clear, but instead of a fluffy sponge cake I get a sticky thin cake, like a cookie, the highlight of the secret?

What is the secret of the secret?

Yes, there is no secret. Regular biscuit. For sponge cakes, yolks and whites are usually separated. Beat separately. Citric acid or salt is added to the proteins. I don't bother. I beat the whole eggs with sugar until white, and then carefully stir in the flour with a spoon and pour it onto a baking sheet. The most important thing here is that when you stir in the flour, make minimal movements so that the air bubbles do not evaporate. And I never mix flour with a mixer. The result is a tall and fluffy sponge cake. There have never been any punctures before.

Tell me, can I use this recipe for a cake that will be decorated with fondant?

Margarita, why not? The most important thing in dancing is a beautiful view in the cut. It’s just that instead of the top layer with cream there will be mastic.
