Plyatski are baked in a deep baking pan; in the Lviv region they are called brytvanka. The baked cake is cut into small square-shaped portions. They are bite sized so you can put the whole piece in your mouth. Plyatsok is not a recipe for a specific dish, it is an idea that can be implemented in different ways. There are as many cooking variations as there are confectioners. And in the arsenal of any self-respecting housewife there are all kinds of dance recipes, prepared depending on the available set of products, the holiday on the occasion of which it is baked, or just the mood when you want something like that. The main difference from just cupcakes, cakes or pies is the variety - the more fillings, creams, impregnations, additives you use, the more delicious the end result will be. Plyatski can be baked with biscuit, shortbread, yeast, puff pastry. The pie can combine several types at the same time.
Plyatski can be shaken (rolled out) and mixed - when batter is used with various additives - nuts, cocoa, poppy seeds, candied fruits, cottage cheese balls, meringues. The layers are soaked in cream, the choice of which, again, can be anything: custard, sour cream, butter, curd. The layer can be fresh fruit, jams, mousses, marshmallows, jelly, caramel. So, for example, in the version of the Flodni dance, popular in Hungarian Jewish families as a wedding cake, there are five layers of sand and four fillings. Traditionally it is apple with cinnamon, poppy seed, nut and plum jam. Thinly rolled dough is placed in the swinging dances, then the filling, then again the dough and the filling, which may already be different. And so on to the height of the baking sheet - a slab. After the entire dance has been collected and cut into portions, each individual cake can still be covered with icing, decorative sprinkles, decorated with cream roses, chocolate figures - whatever your imagination and desire allows for. Plyatsok is a wide field for culinary experiments. To prepare this masterpiece of desserts, you need to not be afraid to experiment with combinations.
