    In a bowl, pour milk over the broken white bread. When the bread swells and absorbs the milk, knead it with your hands, a spoon or a blender into a homogeneous mass. Combine the bread mixture with the minced meat and stir. Peel and chop the onion in any convenient way - with a knife, grater, chopper. Add the onion to the minced meat, add salt and ground black pepper. Stir the minced meat thoroughly until the spices are well mixed.

    Eggs are not added to school cutlets, the bread mass diluted in milk glues the minced meat well and the cutlets do not crumble during heat treatment. I was interested in the recipe for cutlets like in the school canteen. I prepared them from 250 g of pork, 1/5 of a loaf. I also took a medium onion and crushed it along with the meat in a blender. I pre-dried the white bread, broke it into pieces, poured hot water over it (replaced the milk with it). And when the bread swelled, I drained the water and kneaded it thoroughly. I combined the minced meat and bread, added salt, added spices, and mixed. Formed small cutlets. Each one took approximately 1.5 tbsp. spoons of minced meat. There were 6 cutlets in total. I rolled the cutlets in flour, put them in a frying pan and baked them in a preheated oven for 25 minutes. The cutlets turned out very tasty! Delicate, soft! I have never been able to achieve such a consistency of meat in cutlets. They always turned out a bit harsh for me. But not at this time. Thank you so much for the recipe!
