STEP 1
How to make custard pancakes with holes using boiling water and milk? Prepare your food. Use thicker milk - these pancakes will turn out much tastier. The eggs are large, homemade, in extreme cases CO. Vegetable oil can be anything from sunflower to walnut oil. I also recommend using all products at the same temperature: that is, milk and eggs must be taken out of the refrigerator in advance so that they warm up to the temperature of the other ingredients.
STEP 2
Beat the eggs well with a whisk with butter, sugar and salt. Pour in the milk. If you have sweet pancakes, then at this stage you can add vanilla sugar or cinnamon to the dough - the pancakes will turn out very fragrant.
STEP 3
Sift the flour. I recommend not to be lazy, but to sift the flour - in this case the pancakes will turn out more airy, because... sifting helps saturate the dough with oxygen. Stir so that there are no lumps. Be prepared that you may need more or less flour than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough.
STEP 4
Pour in boiling water and mix well again.

The dough turns out to be quite liquid, but very homogeneous and viscous.
STEP 6
Baking pancakes is not that easy. There are several rules. The pan should have good heat conductivity. A cast iron frying pan is ideal for pancakes, but a ceramic one will also work. Grease the frying pan with vegetable oil using a pastry brush or half an onion or potato. Heat the pan well - this is a must! Pour in a small amount of batter and, tilting the pan, spread the batter into a circle. Bake for 2-3 minutes on each side.
STEP 7
For a more delicate pancake texture, grease each pancake with a piece of butter. Serve the pancakes hot right away! Bon appetit!
