STEP 1

How to make PP curd waffles with rice flour in a waffle iron? First, prepare the necessary ingredients according to the list. It is better to take low-fat cottage cheese or with a small percentage of fat content. You can replace rice flour with any gluten-free flour: oatmeal, corn, etc. You can also make waffles from regular flour. But keep in mind that other types of flour may need more or less. You can replace the sweetener with 50-60 regular sugar or powdered sugar.
STEP 2

Mash the cottage cheese with a fork. Or, if necessary, rub through a sieve. There should be no lumps or hard grains left in it. I used cottage cheese in briquettes: it is soft, moderately moist and not lumpy.
STEP 3

Add eggs, milk, sweetener and salt to the cottage cheese. Mash thoroughly with a whisk or fork until smooth. If the eggs are small, you can take 3 pieces.
STEP 4

Add rice flour sifted with baking powder.
STEP 5

Mix the dough again until smooth. The dough should be thick and not spread.
STEP 6

Preheat the electric waffle iron. Pour in some batter and bake the waffles for 3-5 minutes until golden brown. If waffles stick to the surface of the waffle iron, you can grease the waffle iron with vegetable oil before baking each waffle. Or add oil directly to the dough. Even without oil, nothing stuck.
STEP 7

Place the finished Viennese curd waffles on a plate and serve warm or chilled. Bon appetit!
