Curd tartlets with dried mushrooms and chicken

A wonderful appetizer for the holiday table. It's delicious and beautiful! Tartlets are always a welcome table decoration. They are good for the New Year, and for birthdays, and for any other holiday. They are suitable for a buffet, for a snack on the road, and for a picnic (if you pack them correctly and carefully). In a word, there are a great many options for their use... Conveniently, the preparations can be baked in advance, filled with any filling on the day of the celebration and served to your favorite guests. You can make a lot of tartlets at once. From the set of products that I offer in this recipe, I get about 30 pieces (give or take) of the tartlets themselves. The mushroom and chicken filling is delicious and makes the tartlets a very filling dish. Don’t let the time I indicated for preparing this dish scare you, as it includes all the preparatory processes, such as soaking and cooking mushrooms, baking chicken, etc.

    Products for making tartlets. The flour must be sifted. If you use margarine, then you do not need to add salt to the dough. If you take butter, then add 0.5 tsp for taste. salt into the dough. Before kneading the dough, pass the cottage cheese through a meat grinder for homogeneity, rub through a sieve or crush with a potato masher. Mix all the ingredients and knead the dough until smooth.

    We get a homogeneous, soft dough that does not stick to your hands, roll it into a ball. Wrap in cling film and put in the refrigerator for 30 minutes.

    While the dough is resting, let's make the filling. The evening before, I baked chicken fillet in the oven with salt, ground black pepper and chicken spices (40 minutes at 200 degrees). Carefully but quickly washed the dried porcini mushrooms in cold water, then poured cold salted water over them for 4 hours. Then I cooked it in a saucepan for about 2 hours until done (check this way: shake the pan with mushrooms - if the mushrooms settle to the bottom, they are cooked).

    Cut the boiled mushrooms into small pieces, peeled and washed onions into small cubes.

    In a hot frying pan in vegetable oil, fry the onion until golden brown, add mushrooms, oregano, salt, stir, add a little mushroom broth (2-3 tbsp), simmer for a couple of minutes until the water evaporates.

    Place the contents of the frying pan into a bowl, cool, squeeze out the garlic, pepper to taste, and add mayonnaise (sour cream or cream). Finely grate the cheese into a separate container.

    Cut a piece of dough. We roll it out into a layer 0.2-0.3 cm thick. We select a stencil in the form of a circle (lid, saucer, glass) with a diameter slightly larger than the molds in which we will bake the tartlets. We cut circles of the same size according to the stencil. We repeat all steps until the dough is finished.

    Place a circle of dough into each mold and press it along the bottom and sides of the mold. Prick the bottom and sides of each tartlet with a fork in several places to prevent the dough from bubbling. Place the molds on a baking sheet and place in the oven. We bake tartlets at 180 degrees. until slightly browned, not forgetting that later we will put them in the oven again along with the filling.

    Sprinkle the filling with grated cheese on top. Place the baking tray with tartlets in an oven preheated to 180 degrees until the cheese melts.
