STEP 1

How to make cottage cheese soufflé in the oven? Very simple! To begin, prepare the necessary ingredients according to the list. You can use not only wheat flour, but also other gluten-free flour - corn, rice, etc. Adjust the amount of sugar to your taste. You can replace sugar with any sweetener suitable for heat treatment. If the eggs are small, take 4 pieces.
STEP 2

Rub the cottage cheese through a sieve. If you have cottage cheese in briquettes, just mash it with a fork. For soufflé, it is better to choose such cottage cheese - it is moderately moist, soft and without lumps.
STEP 3

Divide the eggs into whites and yolks. It is important that when separating, not a drop of yolk gets into the white, otherwise it will not foam. Place the whites in the refrigerator. Beat the yolks with sugar until smooth.
STEP 4

Add sour cream and cottage cheese to the yolks and beat until smooth.
STEP 5

Add milk, sifted flour and salt. Beat with a mixer until smooth.
STEP 6

Separately, beat the cold whites with a mixer into a thick, stable foam. The container in which the whites will be stored and beaten must be dry and clean. The mixer whisks should also be dry and clean.
STEP 7

Gently fold the whipped whites into the curd mixture with a spatula, stirring the mixture from top to bottom. The finished dough should be fluffy and airy.
STEP 8

Transfer the curd dough into greased baking pans. Place the soufflé in an oven preheated to 180°C for 20-25 minutes until a golden brown crust appears on the surface. The exact baking time depends on your technique and personal preference. It is better not to open the oven door, otherwise the soufflé will settle during the baking process.
STEP 9

Be prepared for the fact that the soufflé may fall off as it cools. In the oven it rises greatly, almost 2 times. However, when cooled, the soufflé almost completely returns to its original size. At the same time, inside it is airy, porous and tender. Sprinkle the finished curd soufflé with powdered sugar if desired and serve, garnishing with mint. Bon appetit!
