You can grind the cottage cheese in advance using a blender to break up all the grains, and for this recipe it is better to use thicker cottage cheese.

    After this, pour in the semolina, baking soda and baking powder and whisk again.

    In another bowl, beat the whites into a strong, stable foam with a mixer or blender with a whisk attachment.

    After this, carefully add the protein mass into the dough in two steps. At the end, add raisins, which must first be kept in boiling water, washed and dried. We take raisins that are not very large and seedless. Raisins were added and everything was mixed. The dough is ready.

    Preheat the oven to 180 degrees. Grease the mold with butter and you can also sprinkle it with semolina. Place the dough into it and smooth it out. We bake our manna at 180 degrees for about 40-50 minutes. You can check the readiness of the dough with a toothpick.

    After the manna is cooked, remove it from the oven, wait for it to cool completely and then transfer it to a plate. Decorate with powdered sugar or sprinkle with white or multi-colored coconut flakes.

Thanks for the recipe) I changed it a little, instead of kefir there was milk of the same volume, about 1.5 teaspoons of baking powder without a slide, I baked it in a 140g multicooker for about 50 minutes. If you have kefir, you don’t need baking powder, you only need soda - it interacts with acid kefir and the effect is obtained, there is no point in adding both at all))
