  1. STEP 1

    STEP 1

How to make a winter salad with cucumbers and tomato paste? Prepare all the necessary ingredients. Choose high-quality tomato paste. You can read useful tips and subtleties of preparing homemade preparations in the article at the end of this recipe.

  2. STEP 2

    STEP 2

Rinse the cucumbers thoroughly in running water; you can use a medium-hard brush. Trim the ends of the cucumbers and cut them into semicircles 0.5-0.7 cm thick.

  3. STEP 3

    STEP 3

Transfer the chopped cucumbers to the pan. Add salt and sugar. Next, add vinegar (9%), vegetable oil and tomato paste. Mix everything well, cover with a towel or lid and set aside. Let the cucumbers stand at room temperature for 40 minutes, during which time they will release the juice needed to prepare the salad. You can find out how to choose a pan by reading a separate article. There is a link to it at the end of this recipe.

  4. STEP 4

    STEP 4

At this time, you can start sterilizing the jars. Wash the jars in running water and soda, place them upside down in a cold oven. Preheat the oven to 150°C and sterilize jars with a volume of 0.5 l - 10 min, 1 l - 15 min. Wash the lids and boil. You can sterilize jars in another convenient and proven way, for example, by steaming or in the microwave.

  5. STEP 5

    STEP 5

Place the pan on the fire and bring to a boil over medium heat, stirring frequently to prevent the mixture from burning. During cooking, the salad will release more juice and the cucumbers will change color. Cook the salad, stirring for 10 minutes. Be careful as the tomato will splatter while boiling.

  6. STEP 6

    STEP 6

Place the prepared cucumber salad with tomato paste into clean jars without sterilization and roll up the lids. Turn the jars upside down, cover them with a blanket or blanket and let them cool completely. From the specified volume of products, I got 2 jars of 700 ml and a little more for testing. Store the preparations in a cool place. Bon appetit!

A lifesaver for me when I forgot to remove cucumbers from the garden on time! This recipe is for those who have their own bed with cucumbers, since the question always arises: what to do with overripe cucumbers? A salad for the winter, cucumbers with tomato paste, really helped me out, I added some overgrown cucumbers and the preparation turned out very tasty. Thank you very much for the recipe!

I really liked the recipe, I want to try it, but I have a couple of questions. Where is it better to store: at room temperature or in the refrigerator? Are jars better screwed or rolled? Thank you.
