Crumbled shortbread cookies with raisins

STEP 1
How to make raisin cookies? Prepare the necessary products. Remove the butter from the refrigerator in advance; it should be soft. Wash the eggs and dry with napkins.
STEP 2
Sort the raisins, remove the stems, and cover with hot water for 10 minutes. Then place the raisins in a colander, draining the water. And rinse it well in cool water. Then dry well on a towel.
STEP 3
While the raisins are soaking, start preparing the dough. To do this, beat the soft butter with a mixer with sugar and salt for about 5-6 minutes at medium speed. The mass should become light and fluffy. Then add raw eggs and beat for another 3-4 minutes until the sugar dissolves as much as possible.
STEP 4
Mix flour with baking powder and sift into the whipped mixture in 3-4 additions, stirring the dough with a spatula each time. At the end you can stir with your hand. You may need more or less flour than I did - focus on the consistency of the dough.
STEP 5
Add grated zest and dried raisins to the dough, knead. The dough should be homogeneous and slightly stick to your hands. Wash your hands and wipe dry, so when forming the cookies the dough will not stick at all.
STEP 6
Use your hands to form balls the size of a walnut and place them on a baking sheet lined with parchment or a baking mat. Lightly press the balls with your fingers until they take the shape of a cake. I used a small lid for this (see photo). The thickness of the cookies is about 0.8-1cm. Don’t make it thinner, otherwise it will turn out tough.
STEP 7
Bake cookies in a preheated oven at 200' for about 15-16 minutes. Determine the exact baking time and temperature based on your oven. The cookies will brown well on the bottom, less on top. Cover the finished cookies with a light cotton towel and cool directly on the baking sheet.
STEP 8
The inside of the cookies is porous and crumbly. Wait until warm and serve, nice and cool. Makes 32 cookies, these are two large baking sheets, 16 cookies each. They do not increase in size much, but you need to leave a distance between them, so the cookies bake more evenly.
