    In a bowl, combine soft butter and sugar and beat with a mixer until smooth.

    Bake the cake in an oven preheated to 180°C for about 40 minutes. The exact time depends on your oven. I'm only giving approximate times. It took me an hour to bake. After all, corn flour is stiffer than wheat flour, so it does not immediately begin to absorb moisture. At the same time, the cake did not burn, but was beautifully browned. If the cake is browned but the inside is not yet ready, cover it with foil. Remove the finished cake from the oven, cover with a towel and leave to cool for 30 minutes.

I wanted to try unusual baked goods, so I bought corn flour and started looking for a recipe on the website. I liked the cornmeal muffin. I took all the products according to the recipe. Soften the butter in advance so that it whips well. The dough turned out very airy, fluffy, like cream. Lastly, I added lemon zest and juice. I noticed that corn flour is more free-flowing than wheat flour. I sifted it, but there were no lumps). I didn’t add raisins, because no one here eats them. But you could have used finely chopped dried apricots, it would have turned out good. I also baked the cake for 40 minutes, it was absolutely ready. It turned out fluffy and finely porous, airy. The cake is easily cut into pieces without crumbling. But the pieces themselves are crumbly). Interesting baked goods. I liked the taste, I love lemons in muffins. I didn’t feel the taste of corn).
