  1. STEP 1

    STEP 1

How to bake cookies from cottage cheese and sour cream? Prepare all the necessary ingredients. Read all the intricacies of making shortcrust pastry in a separate article; you will find a link to it at the end of the recipe.

  2. STEP 2

    STEP 2

Sift the flour into a deep, easy-to-knead bowl. Add sugar, baking powder and salt. Cut the butter into cubes and add to the flour. I took the butter out of the refrigerator in an hour. How and when to replace the baking powder, read the article at the end of this recipe.

  3. STEP 3

    STEP 3

Add the yolks to the bowl. Next, mix everything with your hands. A stand mixer is also easy to handle.

  4. STEP 4

    STEP 4

Add sour cream and continue kneading.

  5. STEP 5

    STEP 5

Take cottage cheese. If yours is grainy, then to make it tender, rub it through a sieve or punch it with an immersion blender. Add cottage cheese to the dough. How to choose cottage cheese, read the link at the end of the recipe.

  6. STEP 6

    STEP 6

Knead the dough. Remember that you may need a little less or more flour, depending on the consistency of the dough. My cottage cheese was slightly liquid, so it took a little more flour. This is how the bun turned out. The dough is dense and does not stick to your hands. Wrap it in film and put it in the refrigerator for an hour.

  7. STEP 7

    STEP 7

Preheat the oven to 200 degrees. Remove the dough from the refrigerator. Cut off half. Roll out the layer to a thickness of 5-7mm. I rolled it out immediately on baking paper, covering it with film on top.

  8. STEP 8

    STEP 8

Cut out cookies with a cookie cutter. Do the same with the other piece of dough.

  9. STEP 9

    STEP 9

Place the baking sheet with cookies in an oven preheated to 200 degrees and bake for about 15 minutes, until golden brown. Time and temperature are approximate, be guided by the operating characteristics of your equipment. Read about how ovens work at the end of this recipe.

For tea I decided to bake cookies from cottage cheese and sour cream. Instead of cottage cheese, I used the sweet curd mass left over from breakfast; it has a delicate, homogeneous consistency that does not require additional grinding. I kneaded the dough according to the recipe, by hand. After the finished dough had rested in the refrigerator for an hour, I began shaping the cookies. I didn’t roll out the first portion, I just put it on a baking sheet with a spoon (the dough was very soft, a little sticky), during baking the dough rose, separated and it turned out to be a single cake))), I cut it into square cookies with a knife. I added a little more flour to the remaining dough, formed a rope with a diameter of about 4 cm and cut it with a knife into pucks 1.5 cm thick. These cookies also rose during baking, but retained their shape. Both cookie options turned out delicious! The first is the most delicate, soft, slightly moist, more like a cake. The second is a classic cookie, crispy and crumbly. I’m happy to add the recipe to my collection, I advise you to try it! Thanks for the recipe, Esenija!
