  1. STEP 1

    STEP 1

How to make cod liver and avocado salad? First of all, prepare all the necessary ingredients. Choose an avocado that is ripe, but not very soft, otherwise it may turn into mush in the salad. Pickled cucumbers can be safely replaced with pickled ones, the taste of the finished salad will sparkle a little with new notes and will not get any worse. Instead of lemon, I used freshly squeezed lime juice, and olive oil with the addition of fresh basil.

  2. STEP 2

    STEP 2

So, first of all, remove the cucumbers from the brine and cut them into thin slices (about 2-3 millimeters thick). If your cucumbers are too large, then cut each circle into 2-4 more pieces.

  3. STEP 3

    STEP 3

Rinse the green onions under running water, dry with paper towels and chop finely. Place cucumbers and onions in a salad bowl.

  4. STEP 4

    STEP 4

Wash the avocado, cut in half, remove the pit and peel. Using a thin, sharp knife, cut each half into medium-sized cubes.

  5. STEP 5

    STEP 5

Add avocado to cucumbers and onions.

  6. STEP 6

    STEP 6

Drain the oil from the cod liver and cut into pieces approximately the same size as an avocado.

  7. STEP 7

    STEP 7

    Add to salad bowl.

  8. STEP 8

    STEP 8

I suggest using finely chopped red onion in the salad, it will add color and brightness to the finished dish. However, you can get by with just green onions. Season the finished salad with olive oil, add lemon or lime juice, lightly salt and pepper. Unscented vegetable oil is also suitable here.

  9. STEP 9

    STEP 9

Gently stir the contents of the salad bowl, taste again for salt. If there is not enough salt and acid, then add the missing component to your taste. Garnish the salad with herbs as desired.

  10. STEP 10

    STEP 10

Ready! You can serve it to the table!

Tomorrow is Christmas Eve, guests will come, not everyone is fasting, so I decided to prepare some kind of fish salad. I settled on a salad with avocado and cod liver. I was captivated by the ease of preparation, and it’s true that I spent very little time. I don’t agree that this is an easy-to-eat dish; after all, cod liver and avocado are solid foods in themselves, as evidenced by the calorie content of the dish and the amount of fat. But how delicious! First, I dealt with the avocado one or two times. For this I have a special mesh, which is very convenient. Then I cut the cod liver into small pieces, not forgetting to drain the oil. I took four small cucumbers, just 100 g, from a jar that I rolled up in the fall according to my mother’s recipe and cut the circles into quarters. I added a little salt and pepper and only then added lemon juice and olive oil with truffles. If you immediately add oil, and then salt. the salt will not be absorbed well. I didn’t have green onions, so there are no onions in the salad, but that doesn’t make it any worse.
