How to bake coconut cookies at home? Prepare all the necessary ingredients. Take the butter out of the refrigerator in advance so that it softens, we will beat it.

  2. STEP 2

    STEP 2

Place the butter in a deep, easy-to-beat bowl. Add sugar, salt and vanillin to the butter, beat for several minutes with a mixer until a fluffy mass forms. If desired, replace vanillin with vanilla sugar. How to do this correctly, read the article at the end of this recipe.

Add the eggs one at a time, mixing well each time with a mixer. The mass should increase and become creamy in consistency. Wash the eggs first using food detergent to remove any dirt.

  4. STEP 4

    STEP 4

Add coconut flakes, stir. It is convenient to do this with a silicone spatula..

  5. STEP 5

    STEP 5

Sift the flour mixed with baking powder. Please note that you may need a little less or more flour. Focus on the consistency (the dough should be viscous) and add flour in two or three additions (mixing the first part with baking powder) to be able to adjust the amount of flour as necessary. Read more about flour and baking powder in the articles at the end of this recipe.

  6. STEP 6

    STEP 6

    Stir well.

  7. STEP 7

    STEP 7

Cover the bowl with cling film and place in the refrigerator for 30-40 minutes.

  8. STEP 8

If I could, I would add coconut flakes to any baked goods. For example, cheesecakes with coconut flakes take on a completely different taste. Delicious!

What wonderful coconut cookies these are! 😍 The recipe is simple, kneads quickly, and bakes the same way. In the absence of a mixer, I whipped everything before adding coconut flakes with a blender with a whisk attachment in a deep blender glass, it whips perfectly. Added a little less sugar. But I poured in coconut flakes straight from the heart, 140 grams instead of 100, so a little less flour. The dough did not turn out viscous due to such an amount of chips; rather, it turned out thick. And there were 23 cookies. At the same time, they did not spread, but rather rose slightly. What a breathtaking aroma there was during baking! I kept them in the oven for 18 minutes, they were slightly golden around the edges by this point. And I think there was no need anymore, because it turned out perfect. The cookies are so airy, tender, slightly crispy on the outside, melting in your mouth. Delight! Perfect taste. I will bake again, it’s just a miracle, not a cookie

A little advice that might be useful to someone. When making cookies, it is better to use natural coconut flakes rather than store-bought ones. To do this, you need to peel the coconut and grate it on a medium grater. Then add coconut to the dough. The cookies turn out delicious, because such chips are moister, unlike store-bought ones, they are a bit dry). I used to use store-bought coconut too, but when I made cookies with freshly grated coconut, I almost gave up on it. I only use it when I need it faster.

Hello, If you make it with vegetable oil, is the recipe the same? I haven't tried beating vegetable oil and sugar. I usually added it at the end after kneading. How's it going here?
