STEP 1

How to bake coconut cookies at home? Prepare all the necessary ingredients. Take the butter out of the refrigerator in advance so that it softens, we will beat it.
STEP 2

Place the butter in a deep, easy-to-beat bowl. Add sugar, salt and vanillin to the butter, beat for several minutes with a mixer until a fluffy mass forms. If desired, replace vanillin with vanilla sugar. How to do this correctly, read the article at the end of this recipe.
STEP 3

Add the eggs one at a time, mixing well each time with a mixer. The mass should increase and become creamy in consistency. Wash the eggs first using food detergent to remove any dirt.
STEP 4

Add coconut flakes, stir. It is convenient to do this with a silicone spatula..
STEP 5

Sift the flour mixed with baking powder. Please note that you may need a little less or more flour. Focus on the consistency (the dough should be viscous) and add flour in two or three additions (mixing the first part with baking powder) to be able to adjust the amount of flour as necessary. Stir well.
STEP 7

Cover the bowl with cling film and place in the refrigerator for 30-40 minutes.
STEP 8

Turn on the oven to preheat (180 degrees). Cover a baking sheet with parchment. Using a spoon, scoop out the dough into small portions.
STEP 9

Flatten the top of each piece.
STEP 10

Bake cookies for 15-20 minutes at 180°C until golden brown. Time and temperature are approximate, rely on your oven and the readiness of the cookies.
