  1. STEP 1

    STEP 1

How to make classic okroshka with sausage? Prepare all the necessary products. Potatoes must be boiled first. To do this, wash it thoroughly and throw it into boiling water, unpeeled, so the vitamins will be preserved in it. Boil potatoes for 25 minutes. Boil the eggs for 10 minutes after boiling. Then leave them to cool in the water in which they were boiled. This way the white will remain soft and the yolk will remain bright.

  2. STEP 2

    STEP 2

Rinse the green onions well under running water, then dry with paper or regular towels. Chop the onion.

  3. STEP 3

    STEP 3

Place the onions in the container in which you will cook the okroshka. Add salt. Using a pestle or any other masher, mash the onion until the juice releases. Okroshka with the addition of such crushed onions acquires a bright taste and aroma.

  4. STEP 4

    STEP 4

Rinse the dill under cold water and dry. Separate the tough stems; it is better not to use them. Finely chop the remaining branches.

  5. STEP 5

    STEP 5

Cool the boiled potatoes. Do not use it warm, it will spoil the taste of cold soup. Peel the potatoes. Finely chop the potatoes into cubes.

  6. STEP 6

    STEP 6

Cut the sausage into thin strips. I prefer this way of cutting other products for okroshka. I got the idea from the chef of a famous restaurant.

  7. STEP 7

    STEP 7

Cool the eggs, peel and chop into thin strips.

  8. STEP 8

    STEP 8

Cut off the ends of the cucumber. If the cucumber has a thick skin, remove it. It is not necessary to remove it from a young fetus. Cut the cucumber into strips. Alternatively, you can grate it on a coarse grater.

  9. STEP 9

    STEP 9

Place all ingredients in a bowl with onions. Stir.

  10. STEP 10

    STEP 10

Divide the base for okroshka into portioned plates and top with kvass. Be sure to add a spoonful of sour cream.

We are opening the okroshka season! Most often I add radishes to okroshka and make it with whey, which remains after cooking the cottage cheese, this is what my grandmother did. It turns out more tender than kvass and the whey is used, waste-free production.

We make okroshka at home very often! We especially love it with kefir, mineral water and kvass! Mom sometimes mixes water with vinegar, vinegar, of course, in a small amount, literally half a teaspoon per liter of water, it turns out sour and delicious! If you also season it with mayonnaise or sour cream, then it’s just SUPER!!!!!!We eat okroshka all year round, we don’t add radishes, sometimes we add turnips)) Although it’s strange, it gives it a specific taste!

Okroshka has long been a favorite dish in the kitchen of any family. When I cook okroshka, I always add chopped greens, cucumbers, potatoes, eggs, ham, and radishes. To season okroshka, you can choose traditional chilled kvass - homemade or store-bought, kefir! And I add either sour cream or mayonnaise! My family is ready to eat this kind of soup even in the heat or in the cold! And my husband does it even every day!

Thanks for the wonderful okroshka recipe. Grandma often makes this in the summer with sausage, cucumber and egg. I liked okroshka with the addition of kvass, and sometimes I ate it without any dressing at all (like a salad). Now I’ll try to make this okroshka myself, it’s very easy to prepare. In the summer, eating this will seem like bliss)

I have the same recipe, only I add mayonnaise along with sour cream. The taste is completely different, especially when using barrel kvass or “sharp” homemade kvass. Instead of sausage, I often add fairly finely chopped boiled chicken meat. There are recipes for Olivier salad to add crayfish meat, crab, or just finely chopped crab sticks. It turns out unusual and yum-yum.
