Classic okroshka with sausage

STEP 1

How to make classic okroshka with sausage? Prepare all the necessary products. Potatoes must be boiled first. To do this, wash it thoroughly and throw it into boiling water, unpeeled, so the vitamins will be preserved in it. Boil potatoes for 25 minutes. Boil the eggs for 10 minutes after boiling. Then leave them to cool in the water in which they were boiled. This way the white will remain soft and the yolk will remain bright.
STEP 2

Rinse the green onions well under running water, then dry with paper or regular towels. Chop the onion.
STEP 3

Place the onions in the container in which you will cook the okroshka. Add salt. Using a pestle or any other masher, mash the onion until the juice releases. Okroshka with the addition of such crushed onions acquires a bright taste and aroma.
STEP 4

Rinse the dill under cold water and dry. Separate the tough stems; it is better not to use them. Finely chop the remaining branches.
STEP 5

Cool the boiled potatoes. Do not use it warm, it will spoil the taste of cold soup. Peel the potatoes. Finely chop the potatoes into cubes.
STEP 6

Cut the sausage into thin strips. I prefer this way of cutting other products for okroshka. I got the idea from the chef of a famous restaurant.
STEP 7

Cool the eggs, peel and chop into thin strips.
STEP 8

Cut off the ends of the cucumber. If the cucumber has a thick skin, remove it. It is not necessary to remove it from a young fetus. Cut the cucumber into strips. Alternatively, you can grate it on a coarse grater.
STEP 9

Place all ingredients in a bowl with onions. Stir.
STEP 10

Divide the base for okroshka into portioned plates and top with kvass. Be sure to add a spoonful of sour cream.
