Chocolate brownie with whipped caramel
Step-by-step preparation
STEP 1
First, I prepare the cream. I soak the gelatin in water and leave it to swell. I combine the cream (30% fat content) with butter (82% fat content) and heat it until hot. Pour sugar into a saucepan with a thick bottom and heat until amber color, without disturbing , but simply rolling from side to side. Important! Do not over-expose the sugar, otherwise the cream will taste bitter. When all the sugar has dissolved, pour in the HOT cream and butter and, without removing from the heat, stir until smooth.
STEP 2
Remove from heat and add salt and vanillin. Stir. Strain through a sieve. Let the mixture cool slightly and add the swollen gelatin. Punch with a submersible blender. Cover with film in contact and put in the refrigerator for 12 hours to stabilize. After time, beat with a mixer 3-4 minutes, until fluffy, airy. Then let's prepare the brownies. Ingredients you will need: Butter with a fat content of 82%. Chocolate with a cocoa content of 56%. Flour, sugar, salt. Eggs at room temperature. Category C1. Alcohol - optional.

Simply whisk the eggs, sugar and salt until smooth.
STEP 5
Pour hot, melted butter over the chocolate and leave for a few minutes.

Then I mix and this should be a glossy mass.

I pour it into a mold measuring 18*19.

I level it. It is very convenient to do this with the help of a spoon like this.

Place in an oven preheated to 170 degrees for 25 minutes.

The crust should be dry on top. Let it cool.

I take it out of the mold and, in principle, the dessert is ready to eat. Good on its own or with a scoop of vanilla ice cream.
