Step-by-step preparation

Cooking timeCooking time: 1 hr 30 mins
  1. STEP 1

    STEP 1

How to make chicken kupaty in the oven? Prepare the indicated products. You can use any chicken fillet mixed with lard or other fat. You can choose dry spices to suit your taste. Garlic - any kind, powdered or fresh. You can also choose greens as you wish. I use salted pork casing.

  2. STEP 2

    STEP 2

Remove chicken from bones if necessary. Cut the chicken fillet into small pieces. Cut the lard in the same way - the pieces should be the same size.

  3. STEP 3

    STEP 3

Wash fresh parsley and dill, dry and chop finely. Add chopped fresh herbs, mustard grains, garlic (dry or chopped fresh), salt, pepper, ground coriander, and dry spices to taste to the bowl with chopped meat.

  4. STEP 4

    STEP 4

Pour the cream into the meat with spices and mix everything thoroughly. You can leave the minced meat for 30 minutes, stirring it from time to time. We need the cream to be absorbed and the mass not to be liquid.

  5. STEP 5

    STEP 5

It is better to take pork casings (intestines) peeled and salted. Rinse them from salt in warm water. Soak in water at a temperature of 20-30 degrees for 20-30 minutes to make them elastic. Rinse the intestines with running water, outside and inside the casing, twice, putting the edge on the tip of the faucet and holding it with your hands. If you have raw, unprocessed intestines, rinse them, sprinkle them with salt, and use the blunt side of a knife to scrape off the salt. Turn out and peel 2 more times. Rinse.

  6. STEP 6

    STEP 6

Meanwhile, the liquid in the prepared meat will be completely absorbed. You can stuff sausages.

  7. STEP 7

    STEP 7

You can stuff the pork casing by hand or using a special attachment. Place the sausage attachment on the meat grinder and pull the edge of the pork casing over it. You need to pull it deeper, 6-7 cm, so that it does not slip. Fill the casing with meat, not too quickly or too tightly, using your hands to push it into the very end of the intestine. Twist the sausages every 10-12 cm and tie them with thread.

  8. STEP 8

    STEP 8

Place the finished kupaty in the refrigerator for 3 hours. After this time, remove them from the refrigerator, place them on a greased baking sheet and prick them with a needle in 6-10 places. Place the chicken kupats in an oven preheated to 190 degrees for 20-30 minutes. Determine the exact baking time and temperature based on your oven. Turn off the heat and leave the kupats in the oven for another 20-30 minutes without opening it.

  9. STEP 9

    STEP 9

If the temperature changes, the sausage may shrink slightly. If it sits in the oven, it will become dense. Serve the chicken kupaty hot. In my oven they turned out a bit pale; to get a golden brown crust, you can fry them in a frying pan. I cut them immediately after cooking. After lying down, they become denser.
