Chicken breast solyanka with cucumber brine

A delicious meat solyanka will decorate a dinner party and family lunch. The most important thing is that meat solyanka is prepared from a large amount of meat. The more meat products go into the hodgepodge, the better. This does not mean the volume of meat, but its variety. Try it - you won't regret it!

  1. STEP 1

    STEP 1

    We prepare meat products.

  2. STEP 2

    STEP 2

Take pickles and brine, bay leaf and peeled celery root.

  3. STEP 3

    STEP 3

We also need tomatoes and onions.

  4. STEP 4

    STEP 4

If the meat is not boiled, then it needs to be boiled in salted water until tender, then removed from the broth and cooled.

  5. STEP 5

    STEP 5

Cut the cooled meat, sausage and brisket into small pieces.

  6. STEP 6

    STEP 6

    Peel and chop the onion.

  7. STEP 7

    STEP 7

Place it in a heated frying pan with vegetable oil. Fry while stirring over medium heat until golden brown.

  8. STEP 8

    STEP 8

Pour boiling water over the tomatoes, peel them, remove the seeds and chop finely.

  9. STEP 9

    STEP 9

Add tomatoes to onions. Simmer for 5 minutes while stirring. Along with the tomatoes, you can add a tablespoon of tomato paste to the fry to make the hodgepodge more beautiful and bright.

  10. STEP 10

    STEP 10

Then pour the cucumber pickle into the pan. You need to take homemade brine so that it is that white. If there is no such brine, it can be replaced with olive brine. Buy olives with pits, because these olives have more flavor. Salt and pepper if necessary.

  11. STEP 11

    STEP 11

Chop the pickled cucumbers and take the olives out of the jar.

  12. STEP 12

    STEP 12

Pour the chopped meat with cold water - three liters for this culinary recipe. And put the pan on the fire.

  13. STEP 13

    STEP 13

When it boils, add celery root and bay leaf to the water (after this you need to remove it).

  14. STEP 14

    STEP 14

Now add the fried onions with brine and tomatoes to the boiling water and add black peppercorns.

  15. STEP 15

    STEP 15

Add olives and pickles. Mix everything.

  16. STEP 16

    STEP 16

When the hodgepodge boils again, taste it for salt (add some salt if necessary), keep it on the fire for another five minutes and turn it off. Place chopped parsley into the pan.

  17. STEP 17

    STEP 17

Place a slice of lemon in each bowl of soup. Season with sour cream. Bon appetit!

I love hodgepodge. But instead of tomatoes, I take tomato paste, which I fry for a long time over low heat, stirring constantly. I also add celery root, fried along with onions. I chop the bay leaf finely. Wow, so yummy. I'll probably make it tomorrow!

My family just loves hodgepodge, but instead of tomatoes I always used tomato paste and I’ve never heard of adding cucumber pickle or olive pickle, I’ll definitely try making hodgepodge according to your recipe, I think it will be tastier than usual.
