Chicken azu with pickles

Chicken with cucumbers and potatoes - meat and side dish. This dish is prepared according to the Tatar basic recipe, only chicken was used instead of beef or lamb. All other ingredients are the same as in the classic recipe. I just didn't add garlic. But if you wish, you can add 1-2 cloves of finely chopped garlic. You can also replace pickled cucumbers with pickled ones. In any case, I recommend using gherkins. They are easy to cut, have thin skin, are juicy and crispy. And any basics turn out tastier than with large cucumbers.

    Prepare the ingredients. To prepare the basics of chicken with pickles, we will need: chicken fillet, potatoes, tomatoes, pickles (preferably gherkins), a little cucumber brine (strain), water, vegetable oil, ground black pepper and salt.

    Wash the chicken fillet, dry it and cut into cubes.

    Also cut the cucumbers into cubes.

    Wash the tomatoes. Make a cross-shaped cut and place in boiling water for a few seconds. Then remove the skin. Cut the pulp into small cubes.

    Heat vegetable oil in a deep frying pan and, stirring, fry chicken in it until golden brown.

    Add tomatoes to the pan. Simmer with meat for about 5 minutes. If desired, you can add 1 tbsp along with the tomato. l. tomato paste.

    Add cucumbers and potatoes to the meat. Salt and pepper. Salt carefully, just a little bit, as we will also add brine. The dish should not be over-salted. It is better to add salt at the end if necessary.

    Mix everything well.

    Pour hot water and cucumber pickle into the pan. Cover with a lid and simmer over low heat for about 20 minutes. Bon appetit!

Recently I have fallen in love with a dish called azu. And then they opened a jar of homemade cucumbers. I decided to make chicken basics with pickles. It would have been spicier with pickled gherkins, but we liked it with homemade pickles. Considering my past experience, I cut the cucumbers larger. During the stewing process, they remained intact and did not boil over. I cut the potatoes into slices and the chicken breast into strips. I don’t have a frying pan with high enough sides, so I stewed the azu in a small cauldron. In addition to the brine, I added more water; we love the velvety potato gravy. I replaced the tomato with a spoon of tomato paste for a richer taste. Azu turned out so tasty and aromatic! Potatoes soaked in cucumber brine are simply incredible! Thanks for the recipe! Thank you very much for the recipe! It turned out very tasty. I made it with pickled cucumbers. I think it turned out no worse than with salted ones. It’s very easy to prepare, this recipe really helped me out on a weekday after work. However, next time I would add a couple more tomatoes for juiciness. And so, the recipe is just super!
