It is better to take boneless chicken, thigh fillet or breast fillet, as you will have to select them later in the finished dish during the meal. The breast fillet turns out a bit dry. So I decided to cook chicken thigh fillet. We will cook everything at once in a frying pan. Therefore, take a deep and spacious frying pan.     Wash the chicken meat and dry it well. Cut it into small pieces. Pour a little vegetable oil into a hot frying pan and place pieces of chopped chicken meat. Fry it over high heat for 7-10 minutes until it browns a little. During the frying process, the meat will release juice, but after a few minutes the juice will evaporate and the meat will begin to brown. This is why you need a strong fire.

    While the chicken is frying, chop the onion and grate the carrots on a coarse grater. If you like the carrots to be felt, then you can simply chop them finely with a knife.

    Then add the onions and carrots to the pan with the meat. Stir and fry everything together for another 3-4 minutes.

    Place the washed buckwheat in the pan. Boil the water. Stir the tomato paste in hot water and pour it over the buckwheat. Add a little salt and spices to taste. Stir and bring to a boil. Cover the pan with a lid and cook over low heat for 13-15 minutes.

    During stewing, buckwheat will absorb water. Taste the buckwheat. It should be soft. I like this dish to be juicy, so I add a little more hot water and remove from the heat. Buckwheat has already stopped cooking, so it won’t boil. But the dish itself will contain a small amount of broth, which will make the dish juicy.

For dinner I prepared merchant-style buckwheat with chicken. This dish is very simple and quick to make. Especially if you use chicken. I cooked in a cauldron, because the frying pan was busy. I had chicken breast. Usually it turns out a little dry, but this time the meat came out juicy and soft. First, I fried the chicken pieces in vegetable oil until white, then added diced onions and carrots, grated on a coarse grater. After frying, I added half a glass of water and simmered for about 15 minutes. And then I added washed buckwheat, poured hot water over it and simmered over low heat until a little water remained at the bottom. The remaining liquid was then absorbed into the buckwheat itself). I didn't add any spices, just salt. Both buckwheat and chicken turned out juicy, soaked in vegetable juices. The dish is nutritious and satisfying. It's very tasty, I recommend it to everyone!

Buckwheat according to this recipe turns out very tasty. I like the feel of carrots in a dish, so I cut them into small strips. This time I used chicken fillet for the merchant-style buckwheat and didn’t regret it at all. I fried the onion in sunflower oil, then added the fillet cut into pieces, when the chicken turned golden, threw in the carrots and after a couple of minutes added tomato paste. After stewing the chicken and vegetables for a bit, I added buckwheat to the pan and, stirring, fryed it for a couple of minutes so that the grains were saturated with the frying. Then I added water, salted it and closed the lid. When the water boiled, without opening the lid, I reduced the heat and simmered the buckwheat on low heat for about half an hour. During cooking, I do not stir the cereal; it will absorb all the necessary moisture, and the excess water will evaporate. This way the buckwheat turns out juicy and crumbly.
