Cheesecake in Lviv
Ingredients
Step-by-step preparation
STEP 1
Cottage cheese and boiled potatoes need to be ground twice in a meat grinder (I used a blender to obtain a smooth, smooth consistency). Add one yolk at a time, constantly grinding. Add soft butter and sugar, constantly grinding to form a fluffy mass.
STEP 2
Add washed and dried raisins and orange zest.
STEP 3
Gently stir in the whipped whites into a fluffy foam.
STEP 4
Place in an oblong mold (I used 13x22 cm, lined with baking paper. Bake for 35-40 minutes at 180*C. Cool. Remove from the mold when cold.
STEP 5
Pour fudge on top (cook it from sugar, vinegar and water, syrup. Grind with chocolate and butter) I have fudge from half the portion.
STEP 6
Before serving, be sure to keep the cheesecake in a cool place for at least 6-8 hours. During this time, it ripens and acquires a different structure.
