Fragrant and airy cake with sour cream. The taste of the cake is simply amazing; you can’t even tell that it consists of the simplest ingredients and is literally prepared “with your eyes closed.” You can use whatever jam you want, just without seeds: plum, strawberry, peach, raspberry, etc. But if it contains berries, then it is better to first crush them in a blender until you obtain a homogeneous paste. When the cake is ready, put it in the refrigerator for a while so that it is properly soaked.

    How to bake a delicious cake with kefir jam? Pour the sugar intended for the dough into a deep bowl and beat in the eggs. Beat with a mixer at medium speed for 5-7 minutes until a fluffy and light mass forms.

    Pour kefir at room temperature into a separate bowl and add jam or marmalade - I used apple jam. The color and taste of the cake will depend on the type of jam. Mix with a mixer at low speed until smooth.

    Pour kefir into a bowl with the egg-sugar mixture and add baking soda. Mix with a silicone spatula.

    Add the sifted flour and gently mix everything with a whisk until there are no flour lumps left. The dough is of medium thickness.

    Grease a baking dish (I have a split pan) with vegetable oil and place it in a preheated oven for 5 minutes - the oil will warm up and the cake will not stick. Pour out all the dough at once and shake the pan a little to even it out. Place the dough in the oven at 160 degrees for 40 minutes.

    Remove the finished cake from the oven, let it cool slightly and remove the molds. I have a mold with a diameter of 16.5 cm - the cake came out high.

    Preparing the cream. To do this, mix sour cream with sugar. There is no need to beat with a mixer, just mix gently with a spoon. We use sour cream with a fat content of 20% or higher.

    Cut the biscuit crosswise into 2 parts - the convex top can be cut off. Grease the bottom cake with cream. Place the second cake layer on top.

My daughter wanted to make the cake herself. For an eight-year-old child, a simpler and faster recipe is needed. On the site I just found a recipe for a cake with kefir jam. This is a cake from my childhood, only we added milk instead of kefir. What’s convenient about cooking is that food is measured in glasses. Just the thing for a beginner cook! My daughter kneaded the dough with 2.5% kefir. The eggs were homemade and large. The soda was cut under the knife. We took half a glass of sugar, because the jam is very sweet. Our jam is strawberry, my daughter wanted the berries to remain whole. Therefore, it was added to the dough last. The cake was baked for 50 minutes at 180°. The mold has a diameter of 20 cm. The pie came out tall, it turned out to be three layers. The crumb is porous, juicy, no impregnation is needed! My daughter added a spoonful of cocoa to the cream. I stirred everything and left until the sugar dissolved. We tried the cake right away, because the children can’t wait to appreciate the fruits of their labors). And it turned out very tasty! Our cake has a wonderful strawberry aroma and taste. The cream is soft and airy. After a night in the refrigerator, the cake became even tastier and more stable. In my old notebook from the 90s, there is a recipe for such a cake from my mother, but it is called “Rotten Stump.” A very simple and delicious cake. It was a good idea. I'll have to bake this over the weekend. Thank you!
