STEP 1
How to make a Number 3 cake? Start cooking by baking the crusts. How to make crust dough? Pour sugar into a saucepan with a thick bottom, add butter and honey. Place the pan on low heat. While stirring constantly, wait until the butter is completely melted.
STEP 2
Then bring the mixture to a boil and remove the pan from the heat. There is no need to boil for a long time so that the sugar does not start to caramelize. Add soda to the hot mixture. The mass will begin to foam and increase in size.
STEP 3
Cool the mixture slightly. To cool it faster, pour it from the pan into another bowl.
STEP 4
Add the eggs to the warm (not hot!) mixture and mix well. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush.
STEP 5
Add half the flour to the resulting mixture. First sift it through a sieve. It is important to sift the flour to saturate it with oxygen. Then the baked goods will turn out airy and rise well during baking.
STEP 6
Knead the dough well with a whisk or spoon, then add the second part of the flour. Knead the dough with your hands. It turns out soft and sticks a little to your hands. There is no need to add more flour, after cooling the dough will become the desired consistency.
STEP 7
Wrap the dough in cling film and refrigerate for at least two hours (or even overnight). After the time has passed, remove it from the cling film, divide it into two equal parts and roll each into a layer 4-5 mm thick directly on the baking paper on which the cake will be baked.
STEP 8
Cut out a number stencil from paper. Place a paper stencil on top of the rolled out dough and cut out the number using a knife.
STEP 9
Remove excess dough. You will need this dough later for the third cake layer. From the remaining dough from the third cake layer, you can cut out decor in the form of stars, hearts or flowers. Prick the crust with a fork in several places and place in the oven to bake at 170-180 degrees for 8-10 minutes until golden brown. Prepare two more cakes in the same way.
STEP 10
While the cakes are baking, prepare the cream. Prepare your food. The cream and cheese should be cold; remove them from the refrigerator immediately before cooking. Choose high-quality, proven condensed milk. Without vegetable fats and food additives. The composition should contain only two ingredients: milk and sugar. The quality of the condensed milk will ultimately determine the taste and quality of the finished dish.
STEP 11
How to make cream? Add condensed milk and powdered sugar to the cream.
STEP 12
Beat the butter mixture until well foamed, but not to stiff peaks.
STEP 13
Continuing beating at low speed, add cream cheese to the creamy mixture. Beat it until fluffy and homogeneous.
STEP 14
Place the cream in a pastry bag fitted with a round tip (I have an open star tip). Place the first cake layer on the baking sheet. And pipe the cream on top over the entire surface of the cake. Make an outline of the number first, as the cake will be open and the cream will be visible. Then fill the middle with cream.
STEP 15
Place the second cake layer on top and add cream again. Then the third cake layer and cream. There is no need to press down the cakes with your hands too much. Decorate the top of the cake as desired. For decoration, you can use cookies baked from leftover dough, small chocolates, candies, marshmallows, marshmallows, dragees, and berries. Chill the cake in the refrigerator for about 2 hours, then serve. Bon appetit!
