STEP 1

STEP 2

Wash the meat and dry it. Cut the meat into small cubes.
STEP 3

Heat vegetable oil in a frying pan. Over moderately high heat, fry the beef pieces until they change color and are browned, about 3-4 minutes. STEP 4

Pour hot water into the pan, bring the meat to a boil, and add salt. Simmer the meat over medium heat with the lid closed for approximately 40 minutes. Veal cooks faster than beef. Therefore, the cooking time will depend on the quality of the meat. Simmer the meat until the water evaporates. The meat pieces should be almost soft.

Wash the pre-peeled onions and cut into small cubes.

Peel the carrots, wash them, cut into medium strips.

Add a little vegetable oil to the pan and add the prepared vegetables, stir. Fry vegetables with meat until vegetables are medium soft.

Place washed and peeled champignons on a kitchen towel to absorb excess liquid. Leave for 15-20 minutes so that all the moisture is absorbed into the fabric. It is important to dry the mushrooms well, otherwise, once saturated with moisture, they will become watery. I cut the mushrooms into slices. If wild mushrooms are used, they must first be boiled and then chopped.
STEP 9

In a frying pan with vegetable oil, fry the mushrooms, stirring occasionally, until lightly browned. Salt the mushrooms a little while cooking.

Add mushrooms to the pan with meat and vegetables, stir.

Wash the buckwheat and place it in a frying pan, spreading it over the entire surface.
STEP 12

Pour warm water into the frying pan so that it is 1-2 cm above the level of the cereal. Salt, add ground black pepper or any other spices to taste.
STEP 13

Cover the pan with a lid and turn up the heat. Bring to a boil. Cook buckwheat over low, moderate heat. At the same time, do not stir the contents of the pan and, if possible, do not lift the lid often so that the dish not only cooks, but also steams. It is convenient to use a glass lid in this case.
STEP 14

After about 10-15 minutes, when no water is visible on the surface, turn on low heat and simmer the buckwheat with the lid closed until the liquid is completely absorbed. During this time, the cereal will soften, become crumbly and aromatic.
STEP 15

Serve buckwheat with meat, mushrooms, onions and carrots with fresh vegetables and herbs. Bon appetit!
