Black lentil salad with herbs

Step-by-step preparation
STEP 1
Black lentils are very easy and quick to prepare. Pre-sort and rinse a glass of lentils. Then pour into boiling water. We will need 2-3 glasses of water, add a little salt to the water.
STEP 2
While the lentils are cooking, prepare the greens. There should be a lot of greens in this salad. I take a straight bunch of parsley and chop only the leaves, because the denser stems of parsley are a little bitter. But I wouldn’t want that at all. And we begin to assemble our salad
STEP 3
Let's take a bunch of cilantro. This is a very fragrant green plant. The stems of cilantro are thinner, so I won’t be too fussy with it and just chop everything. The crunchy celery stalk is a dieter's dream. They say that the substances contained in its fibers burn a lot of calories, so feel free to add it to our salad.
STEP 4
The lentils are already ready. When boiling, the pigment colored the water, so our lentils are no longer so brightly black. Pour out the remaining water, let the lentils cool and mix them with the herbs.
STEP 5
To make the salad interesting and healthy, we’ll add additional accents: coarsely chopped walnuts and dried cranberries in apple juice. We need nuts for texture and in general it’s just a super food in terms of effectiveness comparable to olive oil in its anti-inflammatory properties. Cranberries dried in apple juice contain a little sugar, but a lot of substances that strengthen the immune system.
STEP 6
All that remains is to season the salad with lemon juice, cold-pressed vegetable oil, salt and pepper. It turned out to be a healthy, tasty and satisfying dish! Be sure to try it! Bon appetit and please stay healthy!
