Beetroot caviar for the winter through a meat grinder is loved in our family for two reasons - it is very tasty, and it was also invented by my grandmother.     How to make beet caviar for the winter through a meat grinder? Cut the bell pepper into cubes and fry.

    Grate the carrots on a coarse grater. Fry.

    Cut the onion into cubes and also fry separately.

    Peel the beets and cut into cubes.

    Pass the beets through a meat grinder with a fine grid. Transfer the mixture into a deep bowl with a thick bottom. Stew with vegetable oil (100g) and 3 tbsp. l. vinegar 30 minutes.

    Add all the individually fried vegetables to the beets and mix.

    Pour in tomato juice and add tomato paste.

    Add salt and mix. Simmer over low heat for 30 minutes, covered. Don’t forget to stir so that the caviar doesn’t burn.

    Grind the hot pepper in a blender bowl and add to the caviar 10 minutes before the end of cooking.

    We break the mass in the pan with a blender until it becomes puree. Simmer on low heat for another 5 minutes. And put the hot caviar into sterile jars. Sterilize 0.5 liters. jars 30 minutes. Add 1 tsp. vinegar into each jar and roll it up, turn it over until it cools.

    This caviar can be stored in the apartment. There is no need to hide it in a cold place.

    In winter, we’ll open the jar and enjoy! This is delicious! You can cook this caviar in the summer just to eat. If you like it, you can then close it for the winter. Bon appetit!

Thanks for the recipe, I’m preparing it now. When I try it, I’ll write again :), But I didn’t understand - the recipe says that you need 880 ml of sunflower oil, and then that you need to add oil in brackets 100 g and 3 tbsp of vinegar to the pan, so how much Do you still need oil, or is it 800 including frying? :)
