    Grind the flour with yeast until crumbly. Add salt, sugar, soda and bran, mix everything thoroughly.

    Make a well in the flour mixture and pour warm water into it. Knead soft dough. While kneading, add vegetable oil and knead the dough thoroughly. It should not stick to your hands.

    Place the dough in a bowl and leave in a warm place for 40-60 minutes to rise. The dough should increase 2-3 times.

    Knead the risen dough with your hands and divide it into 4 equal parts, carefully roll each part into a smooth ball.

    Roll each bun into a flat cake about 3-4 mm thick on a work surface sprinkled with flour. Place the cakes on baking paper and leave to rise for 20-30 minutes.

    Bake pita flatbreads on a preheated baking sheet in a preheated oven at maximum temperature (mine is 240 C). It is very important to warm up both the oven and the baking sheet! Before baking, carefully drag the paper with the tortillas onto a preheated baking sheet and bake for 4-5 minutes. The top of the cakes will remain light, but they will only be golden brown on the bottom. Remove the cakes from the oven, cover them directly on the baking sheet with a towel and let cool completely.

    But this is how the cakes turn out when cut, or rather in a split. They are hollow inside. Serve the flatbreads with first courses or fill them with all sorts of toppings. Bon appetit!

Everything is great, only the pita is Greek, not Arabic. :)
