Arabic Maamoul cookies with filling

Traditional oriental cookies come from Lebanon. Maamul shortbread cookies in Turkey are also called Khurmali Kurabye or Lebanese Kurabye. It is considered a holiday cookie for Arab Christians and is traditionally baked on holidays such as Easter and Eid al-Adha. These delicious, crumbly cookies are made with semolina and a nut or date filling. It requires special molds. But I haven’t seen anything like this in our stores, so you can use improvised means.

    When the dough proofing time has passed, we begin to form the cookies. Roll out a small ball of dough and a slightly smaller ball of nut filling. Flatten the dough ball into a flat cake, put a ball of filling on it, seal it and roll it up.

    Then we flatten the ball with the filling again into a round cake about 1 cm thick. Using a regular knife and fork, we decorate the cookies on the sides and top at our discretion.
