If the eggs are small, take 4 pieces. All foods should be at room temperature, so remove them from the refrigerator in advance. Kefir is suitable for any fat content.

    In a deep bowl, combine eggs, sugar, and salt and beat with a mixer until fluffy and light in color. The mass should increase in volume by 3-4 times. The airiness of your cake depends on how you beat the eggs. You can’t beat the mixture until it’s white and thick—the whites will lose the air bubbles that lift the dough. And in this case, even baking powder will not help. The dough will either not rise at all or rise weakly.

    Pour in kefir, vegetable oil and lemon juice. Add lemon and orange zest (optional). Mix the mixture with a mixer at low speed. You can replace kefir with milk or natural yogurt.

I immediately want to say thank you to the author for a simple pie in the oven! I replaced the kefir in the recipe with a mixture of milk and fruit yogurt taken in equal proportions. I didn't add any orange zest. Otherwise I followed the recipe. The pie rose well. The result was airy, delicate, and what an aroma! And a light taste of lemon! Mmmm... Very tasty and simple. There were no indifferent people at home. Everyone wanted more!
