To make peach pie at home, you will need seasonal fruits unless you plan to bake with canned goods. Sponge cake is considered the most delicious and tender - its airy texture goes well with juicy peaches, and both complement each other, creating an ideal taste.
The simplest and fastest recipe for peach pie is aspic with kefir or sour cream. There are many variations of it, one of which is this. Take: flour, sugar, kefir, eggs, soda, salt to enhance the taste. The batter is mixed. It is poured into a greased mold. Sliced peaches are placed on top of the surface. It is advisable to do this beautifully, creating a pattern.
There is no need to press the peaches into the dough - when baking, they will fall down on their own, while the sponge cake will rise up. The result is an airy peach pie that can be served with tea or coffee.
Tip: Peaches release a lot of juice, especially when heated. It is advisable to let the fruit sit for some time after slicing to get rid of excess moisture. Otherwise, the cake may “leak” or not rise as desired. That is, the peaches will give up liquid to the dough, which will already be excess. And when cut, such baked goods will look ugly - the cake will seem to be flattened.
Another way to avoid a “floating” pie is to initially use dense peaches that give little juice.
The third method: take peaches canned in syrup and dry them thoroughly before adding them to the dough.
It is important to remember that peaches that ooze juice when you just bite into them are not suitable for baking peach pie! More precisely, they can be used, but the cake will look like a sole.
