Cucumbers with bell peppers for the winter
For pickling and pickling in jars, always select small-sized cucumbers, preferably the same size. This way the salting process will proceed evenly. In the classic variation, they are added whole, but the peppers are cut into quarters (if they are sweet). Hot peppers, for example chili, are placed whole, with the tail. This way it is clearly visible and no one will inadvertently swallow it))
There are many options for chopping vegetables for this dish. Especially if you come across different cucumbers, some large, some small. They are cut into circles, semicircles, cubes, and quarters. Pepper - also in quarters, rings, half rings, squares. In addition to these two vegetables, onions, garlic, and carrots are also added to the preparations. The latter is often placed as a decoration - in jars, cut into “wheels”, it looks very beautiful.
The easiest and fastest way is to place vegetables directly in jars, liter, three-liter. Followed by pouring cold or hot marinade or brine. Sometimes gelatin is added to them, in which case the result is a complete snack with “gravy”.
If there is a place in the house with a low temperature suitable for long-term storage, cucumbers and peppers can be pickled/salted in a large saucepan or barrel. The usual ripening time is one month. But first, the brine must be kept warm for a day or two for fermentation to begin. Ideal are oak and linden barrels, which must be filled to the brim with water for at least two weeks before use.
This preparation loves the following spices more than others: garlic, horseradish leaves, dill umbrellas, allspice. Also, recently in stores you can find dry mixes for homemade preparations with the appropriate names.
