Cucumber tomato salad without sterilization

STEP 1
How to make a salad of tomatoes and cucumbers for the winter? Prepare all the necessary products. Of course, such preparation should be done during the vegetable season and take ground tomatoes, cucumbers and peppers.
STEP 2
Wash the cucumbers, dry them and cut them into rings or half rings (depending on the thickness of the cucumber.
STEP 3
Wash the tomatoes, dry them, remove the stems and cut into thick slices. I recommend using plum-shaped tomatoes for preparations - they have thick skin and hold their shape well.
STEP 4
Wash the pepper, remove the stems and seeds, cut into thin strips.
STEP 5
Peel the onion and cut into thin half rings.
STEP 6
Mix all the chopped vegetables, add chopped garlic. I put the cloves through a press, but you can grate the garlic on a fine grater or simply chop it with a sharp knife.
STEP 7
Salt the vegetables.
STEP 8
Add sugar.
STEP 9
Pour in vegetable oil.
STEP 10
Pour in vinegar. This recipe uses 6-9% vinegar, but if you have essence, dilute it with water in a ratio of 1:8.
STEP 11
Place all the vegetables in a thick-bottomed bowl and place over low heat.
STEP 12
Cook on low heat for about 20 minutes. The salad will be greatly reduced in volume.
STEP 13
Sterilize the jars in any convenient way. I pour some water into the jars and put them in the microwave for 5-7 minutes. But you can also sterilize them in the oven at 100 degrees for about 30 minutes, or simply scald them with boiling water, or steam them. Boil the lids for 5 minutes.
STEP 14
Place the salad in jars and close the lids tightly or roll up. No sterilization required.
