Cucumber tomato pepper salad

STEP 1
How to make a salad of cucumbers, tomatoes and peppers for the winter? Very simple! Prepare all the necessary products.
STEP 2
Peel the garlic. Cut the bell peppers in half and remove the seeds. Rinse all vegetables under running cold water. If desired, peel the tomatoes. Read about how to do this correctly at the end of the recipe. I usually don't do this and use the tomatoes as is.
STEP 3
Cut the tomatoes into small slices or cubes. Place the tomatoes in a pan of suitable size. The article on pans, link at the end of the recipe, will help you choose the ideal pan.
STEP 4
Grind the bell peppers into half rings or cubes, as you prefer. Place the peppers in the pan with the tomatoes.
STEP 5
Add salt, sugar and peppercorns. For preparation I used Adyghe salt. It contains seasonings, which made the finished salad more aromatic and brighter.
STEP 6
Mix everything thoroughly and place the pan on the stove. Bring everything to a boil over high heat, then reduce the heat to low and simmer for about 15-20 minutes.
STEP 7
At this time, work on the rest of the products. Wash the cucumbers, remove the stems. Cut the cucumbers into thin circles or semicircles. Chop the garlic finely with a knife.
STEP 8
Place the cucumbers and garlic into the pan.
STEP 9
Pour in vegetable oil and simmer everything together for about 5-10 minutes. At the end, add vinegar. Wash the jars and lids with soda and sterilize in any way available to you. STEP 10
Place the prepared salad in jars and cover with lids. Line a wide pan with a towel to prevent the jars from bursting when heated. Place the jars in a saucepan and pour water almost up to the hangers. Place the pan on the fire and sterilize 0.5 liter jars for 10-15 minutes, 1-1.5 liter jars for 15-20 minutes, 2-3 liter jars for 20-30 minutes.
STEP 11
Next, close the jars with lids using a key. Turn the top upside down, wrap it in a blanket and leave it like this until it cools completely. Put the workpiece in the basement or pantry for long-term storage.
STEP 12
Serve vegetable salad with potato and meat dishes.
