Zucchini with tomato paste

Step-by-step preparation
- STEP 1 - How to make zucchini with tomato paste for the winter? Prepare all the products indicated in the recipe. Wash the zucchini and then cut off the stem attachment points. 
- STEP 2 - For this recipe, it is better to use young zucchini. They have a delicate thin peel and small soft seeds. If you have mature vegetables, cut off the skin and remove the seeds. First cut the zucchini into rings 0.5 - 1 cm thick, and then cut each ring in half or into four pieces. 
- STEP 3 - Dilute tomato paste in water until smooth. To taste, the amount of paste can be increased to 6-7 spoons. Pour in vegetable oil. Add salt and sugar. 
- STEP 4 - Place the zucchini in a saucepan and place on the stove. Bring everything to a boil over high heat, stirring occasionally. Then reduce the flame to moderate and cook until the zucchini is soft and cooked. It took me about 30 minutes. 
- STEP 5 - Add the garlic, passed through a press, into the pan and pour in the vinegar. Stir and taste. Add salt, sugar or vinegar if necessary. Keep it on the fire for about another minute or two. 
- STEP 6 - Sterilize jars and lids using any method available to you. Place the boiling salad into sterile jars and close the lids using a special key. 
- STEP 7 - Turn the jars upside down and cover with a thick blanket. Leave until completely cool, and then store in a cool, dark place for long-term storage.
