  1. STEP 1

    STEP 1

How to make zucchini with tomato paste for the winter? Prepare all the products indicated in the recipe. Wash the zucchini and then cut off the stem attachment points.

  2. STEP 2

    STEP 2

For this recipe, it is better to use young zucchini. They have a delicate thin peel and small soft seeds. If you have mature vegetables, cut off the skin and remove the seeds. First cut the zucchini into rings 0.5 - 1 cm thick, and then cut each ring in half or into four pieces.

  3. STEP 3

    STEP 3

Dilute tomato paste in water until smooth. To taste, the amount of paste can be increased to 6-7 spoons. Pour in vegetable oil. Add salt and sugar.

  4. STEP 4

    STEP 4

Place the zucchini in a saucepan and place on the stove. Bring everything to a boil over high heat, stirring occasionally. Then reduce the flame to moderate and cook until the zucchini is soft and cooked. It took me about 30 minutes.

  5. STEP 5

    STEP 5

Add the garlic, passed through a press, into the pan and pour in the vinegar. Stir and taste. Add salt, sugar or vinegar if necessary. Keep it on the fire for about another minute or two.

  6. STEP 6

    STEP 6

Sterilize jars and lids using any method available to you. Place the boiling salad into sterile jars and close the lids using a special key.

  7. STEP 7

    STEP 7

Turn the jars upside down and cover with a thick blanket. Leave until completely cool, and then store in a cool, dark place for long-term storage.

Thank you for the recipe, this year there are a lot of zucchini, I made enough caviar and there was a lot of hassle with it, I decided to cook it according to your recipe. I liked that it turns out a lot and few problems, I got 3 liters and 1 700 gram jar. The zucchini is delicious, I added a little salt (I did everything according to the recipe, and I had to add salt), and I really liked the broth.
