Instead of pork, you can use any other meat: beef, lamb, chicken or turkey, but keep in mind that the cooking time will change. If your meat is frozen, defrost it first.     Wash the pork, dry it and cut into small pieces.

    Wash the tomato and peel off the skin. To do this, make crosswise cuts on top of it with a sharp knife. Place the tomato in boiling water for 1-2 minutes. Remove, cool slightly and remove the skin.

    Peel, wash and cut the potatoes into large cubes. I cut all the vegetables into large pieces so that they do not boil over during the cooking process. If you want a more homogeneous and cooked vegetable component, then the vegetables need to be cut smaller.

    Wash the zucchini and cut into semicircles. If the zucchini skin is not too hard and the seeds are not very large, then they do not need to be removed. My zucchini is very young, so I just removed the stalk.

    Peel the garlic and finely chop it with a knife, grate it or pass it through a press.

    Add potatoes to the meat and pour in 100 ml of water.

    Cover the pan with a lid and simmer the meat and potatoes over medium heat for about 20 minutes.

    Add the zucchini, tomato, minced garlic, bay leaf and ground parika to the pan. Salt and pepper to taste. Mix everything carefully.

I was looking for another recipe for a dish with zucchini and found this one. I immediately liked the composition, only I prepared a lighter version, replacing pork with chicken breast. Preliminary light frying of the meat and potatoes gave a pleasant taste to the whole dish. I had zucchini from the garden, I just harvested them before the frost. For stewing, I took the smallest ones, about 7 cm long. I didn’t want to add tomatoes, so I took some homemade ketchup. From the spices I added turmeric, paprika, dried dill and freshly ground black pepper. It turned out very tasty and satisfying. The bouquet of spices gives a pleasant aroma, but there is no strong pungency. The stewed vegetables turned out to be tender, but at the same time they do not fall apart, they remain intact pieces. I prepared this dish for myself, I liked everything. Thank you for the delicious recipe!
