Zucchini stewed with meat and potatoes
Step-by-step preparation
STEP 1

How to make zucchini stewed with meat and potatoes in a frying pan? Prepare the necessary ingredients. Instead of pork, you can use any other meat: beef, lamb, chicken or turkey, but keep in mind that the cooking time will change. If your meat is frozen, defrost it first. Read about all the intricacies of proper defrosting in a separate article, link at the end of the recipe. Instead of tomatoes, you can use ketchup or tomato paste.
STEP 2

Wash the pork, dry it and cut into small pieces.
STEP 3

Wash the tomato and peel off the skin. To do this, make crosswise cuts on top of it with a sharp knife. Place the tomato in boiling water for 1-2 minutes. Remove, cool slightly and remove the skin.
STEP 4

Peel, wash and cut the potatoes into large cubes. I cut all the vegetables into large pieces so that they do not boil over during the cooking process. If you want a more homogeneous and cooked vegetable component, then the vegetables need to be cut smaller.
STEP 5

Wash the zucchini and cut into semicircles. If the zucchini skin is not too hard and the seeds are not very large, then they do not need to be removed. My zucchini is very young, so I just removed the stalk.
STEP 6

Peel the garlic and finely chop it with a knife, grate it or pass it through a press.
STEP 7

STEP 8

Add potatoes to the meat and pour in 100 ml of water.
STEP 9

Cover the pan with a lid and simmer the meat and potatoes over medium heat for about 20 minutes.
STEP 10

Add the zucchini, tomato, minced garlic, bay leaf and ground parika to the pan. Salt and pepper to taste. Mix everything carefully.
STEP 11

Bring the water to a boil and simmer everything together for another 10-15 minutes over low heat under the lid.
STEP 12

Place the finished dish on plates and serve hot to the table. Bon appetit!
