    Let's prepare the ingredients. For such a dish, it is better to use zucchini of milk maturity, when there are practically no seeds in them, and the skin is very tender and soft. Of course, if you wish, you can fry fairly mature zucchini by peeling it off and removing the core with seeds, but in the finished dish, such zucchini will still not be as tasty as young zucchini. Wash the zucchini and dry it on cotton towels. Cut off the ends on both sides.

    Cut the zucchini into slices no more than one centimeter thick. Sprinkle the zucchini slices with salt and place in a bowl. Then drain the released juice from the dish. Pour wheat flour into a plate and roll the zucchini slices in it. Shake off excess flour from the zucchini.

    Pour vegetable oil into a frying pan with a thick bottom. Let's warm it up. Place the cooked zucchini slices on the heated oil. Sprinkle ground pepper on top if desired; there is no need to add salt, the zucchini has absorbed enough salt. Fry the zucchini over medium heat until golden brown on one side.

    Then turn it over and fry on the second side. If the zucchini slices turn out to be thick, and it seems that they are not fried and will crisp up in the finished dish, then you can cover the frying pan with a lid and keep the zucchini in the frying pan for a few more minutes so that it is better baked on the inside, but not burnt on the outside.

    Remove the zucchini from the frying pan onto a plate lined with a paper towel so that the excess oil is absorbed into the napkin and the zucchini in the finished dish does not taste very greasy. We do this with all the cooked zucchini. Sprinkle hot zucchini with garlic passed through a press. Or add chopped garlic to the sauce, which we serve with the zucchini. Serve the fried zucchini in flour to the table, with sour cream, mayonnaise or other sauce as desired. Bon appetit!

I never salt zucchini before frying so that the juice does not release. Breaded in flour, they do not lose their juiciness and do not “shoot” when immersed in oil. Usually, zucchini is served with mayonnaise sauce with garlic, and I like to eat them with fresh tomatoes or, as today, with bell peppers, just adding a little salt.
