Zucchini appetizer Mother-in-law's tongue

Step-by-step preparation
STEP 1

Take one or two zucchini, depending on the size. Cut lengthwise into thin slices. I got nine of them. Place in a colander, sprinkle with salt and leave for a while to release the juice.
STEP 2

Wash the tomatoes, cut into thin slices according to the number of zucchini slices.
STEP 3

You can use any cheese, but it’s better to make it soft so that it melts easier. Slice.
STEP 4

Any greens to taste (dill, parsley, cilantro) are chopped accordingly.
STEP 5

Squeeze the garlic cloves into the mayonnaise. Its quantity depends on your taste and desire. Mix thoroughly, add ground red pepper.
STEP 6

Dry the zucchini slices with a paper towel and roll in flour. Shake off excess flour.
STEP 7

Beat the eggs with a whisk, add a little salt and pepper if desired. Roll in flour or breadcrumbs again. I didn’t do this, but in vain - an insufficiently crispy crust formed during frying.
STEP 8

Heat a frying pan with vegetable oil, fry the zucchini over high heat on both sides until golden brown and crispy. Remove and place on a towel to remove excess fat.
STEP 9

Apply garlic mayonnaise over the entire surface of the zucchini.
STEP 10

Sprinkle with herbs. Place a slice of tomato on one edge, stepping back slightly, and a piece of cheese on the other. Roll up, starting from the tomato side. Secure with toothpicks.
STEP 11

Place in a warm frying pan on the remaining oil and keep covered until the cheese melts.
STEP 12

The appetizer is ready. You can enjoy it either hot or cold - it won’t be any worse. Spicy Zucchini Rolls are an explosion of flavor!
