Whoopie Pie Cake with Sour Cream and Fudge

Sift the flour and mix well with cocoa powder, baking powder, soda and salt.
STEP 2

Beat soft butter with sugar and vanilla sugar for two minutes. Then add room temperature eggs.

Beat for another four minutes.

Mix hot coffee with milk.
STEP 5

In three batches, alternately adding milk-coffee liquid to the whipped butter, and then the dry mixture, knead the dough.

Transfer 150 grams of viscous-stretchy dough into a pastry bag.

Divide the rest of the dough equally into four baking layers. It is important to bake the cakes separately, because if you bake one thick cake, you won’t be able to cut it like a regular sponge cake; its structure is closer to a cookie, so it will crumble. Line baking pans with parchment and spread the dough evenly over the bottom. If it is difficult to distribute with a silicone spatula, you can grease your hands with vegetable oil and distribute the dough with your hands.
STEP 8

Bake the cakes for 20-25 minutes in an oven preheated to 180 degrees. Then let them cool.
STEP 9

Meanwhile, mark biscuit template circles onto parchment paper (with a pencil, pen or marker) for decoration. Line a baking sheet with this parchment, pattern side down.

Spread the dough on parchment according to the pattern.

Bake biscuits for 10-12 minutes at 180 degrees.

Meanwhile, cut off the tops of three cake layers.

Beat chilled sour cream with powdered sugar and vanilla sugar into a fluffy cream.

Place the cream in a pastry bag. Leave a little cream for the cakes.

Assemble the cake, beautifully sandwiching the cake layers with cream, as shown in the photo.

This beautiful layered pattern is visible from the side.

While the cake is brewing, assemble the cakes to decorate the cake.

And also prepare chocolate fudge icing: add hot cream to the crushed chocolate, mix well until smooth. Then add melted butter and stir until smooth.

Cover the cake with fondant.

Cut off a small part from the side of the cakes.

Decorate the top of the cake with brownies.
