Step-by-step preparation

Cooking timeCooking time: 1 hr 3 mins
  1. STEP 1

    STEP 1

Sift the flour and mix well with cocoa powder, baking powder, soda and salt.

  2. STEP 2

    STEP 2

Beat soft butter with sugar and vanilla sugar for two minutes. Then add room temperature eggs.

  3. STEP 3

    STEP 3

    Beat for another four minutes.

  4. STEP 4

    STEP 4

    Mix hot coffee with milk.

  5. STEP 5

    STEP 5

In three batches, alternately adding milk-coffee liquid to the whipped butter, and then the dry mixture, knead the dough.

  6. STEP 6

    STEP 6

Transfer 150 grams of viscous-stretchy dough into a pastry bag.

  7. STEP 7

    STEP 7

Divide the rest of the dough equally into four baking layers. It is important to bake the cakes separately, because if you bake one thick cake, you won’t be able to cut it like a regular sponge cake; its structure is closer to a cookie, so it will crumble. Line baking pans with parchment and spread the dough evenly over the bottom. If it is difficult to distribute with a silicone spatula, you can grease your hands with vegetable oil and distribute the dough with your hands.

  8. STEP 8

    STEP 8

Bake the cakes for 20-25 minutes in an oven preheated to 180 degrees. Then let them cool.

  9. STEP 9

    STEP 9

Meanwhile, mark biscuit template circles onto parchment paper (with a pencil, pen or marker) for decoration. Line a baking sheet with this parchment, pattern side down.

  10. STEP 10

    STEP 10

Spread the dough on parchment according to the pattern.

  11. STEP 11

    STEP 11

Bake biscuits for 10-12 minutes at 180 degrees.

  12. STEP 12

    STEP 12

Meanwhile, cut off the tops of three cake layers.

  13. STEP 13

    STEP 13

Beat chilled sour cream with powdered sugar and vanilla sugar into a fluffy cream.

  14. STEP 14

    STEP 14

Place the cream in a pastry bag. Leave a little cream for the cakes.

  15. STEP 15

    STEP 15

Assemble the cake, beautifully sandwiching the cake layers with cream, as shown in the photo.

  16. STEP 16

    STEP 16

This beautiful layered pattern is visible from the side.

  17. STEP 17

    STEP 17

While the cake is brewing, assemble the cakes to decorate the cake.

  18. STEP 18

    STEP 18

And also prepare chocolate fudge icing: add hot cream to the crushed chocolate, mix well until smooth. Then add melted butter and stir until smooth.

  19. STEP 19

    STEP 19

    Cover the cake with fondant.

  20. STEP 20

    STEP 20

Cut off a small part from the side of the cakes.

  21. STEP 21

    STEP 21

Decorate the top of the cake with brownies.

  22. STEP 22

    STEP 22

Sprinkle crushed cake toppers and sprinkles around the decoration, if desired. After 5-6 hours in the refrigerator, the Whoopie Pie cake is ready to delight connoisseurs! Bon appetit!

I don’t know what’s wrong, everything is according to the recipe. 100 g cocoa. And I diluted 2 teaspoons of coffee with 110 g. Mountain with water. The dough turned out bitter, not sweet. We made 2 cakes, the shape was 20 cm. The cream turned out to be thick, I even added 2 tablespoons of store-bought dry cream, and the thickener (what I had at home) was still liquid. I’m sitting, I don’t know what to do (((

It turns out very tasty, especially on the second day, somewhat reminiscent of a chocolate muffin. I did everything according to the recipe and it worked. I just made a mistake with the sour cream for the cream, the cream came out runny, but the zoto soaked in well, I recommend it to everyone
