the word "talkan" - translated from Kazakh means roughly "destroyed", that is, crushed. The wheat is crushed and this very product talkan is obtained. But the dish described as halva in this recipe in Kazakh national cuisine is called zhent (or dzhent). Many describe that nomads first sprouted wheat, then obtained talkan from it. This is fundamentally wrong. A classic example of producing talkan from wheat is preliminary frying of peeled and washed wheat (like sunflower seeds) on a baking sheet, followed by crushing in a mortar or hand mill. In the Kazakh national cuisine there is talkan of millet, the procedure is similar to the production of wheat talkan.
