STEP 1

How to make waffle cookies in a waffle iron? Prepare all the necessary ingredients for making waffle cookies in a waffle iron. These cookies are made on gas using a special mold.
STEP 2

Break them into a deep bowl, add sugar and beat thoroughly until fluffy. The eggs should turn white and expand well.
STEP 3

Continuing to beat the egg mass, add sour cream little by little, beating well each time. Use good quality sour cream, then the waffle cookies will turn out softer.
STEP 4

Melt the butter in any convenient way and be sure to cool to room temperature, otherwise the eggs will curdle after adding. Continuing to beat the egg-sour cream mixture, pour in the melted butter in a thin stream. Of course, you can replace it with margarine, but then the cookies will turn out heavier and denser.
STEP 5

Mix starch, flour, salt and vanillin and literally one pinch of soda in a bowl. Mix everything well and sift through a fine sieve into a bowl with the mixture. This will saturate the flour with air and get rid of small debris, if any.
STEP 6

Mix everything thoroughly until the dough is homogeneous, without lumps. The dough should not be dense, but approximately like thick sour cream. If the dough turns out too thick, add a little more sour cream and mix again until smooth.
STEP 7

Grease the cookie pan with vegetable oil and place on the stove over medium heat. Do not pour too much oil into the mold, otherwise it may leak and catch fire. Preheat both sides of the pan. Place approximately 2/3 of the dough into each cavity so that it does not escape from the mold during cooking.
STEP 8

Close the mold and press both sides using the handles. Cook the cookies over medium heat for literally 2-3 minutes on each side. It should turn brown and come out of the mold freely. Remove from gas, uncover and remove wafer cookies to a plate. Grease the pan again with oil, reheat and bake the cookies until the dough is finished. Let it cool and serve. If desired, you can sprinkle the cookies with powdered sugar.
