STEP 1

How to make Viennese shortbread pie with jam? Prepare the necessary ingredients for this. Choose any jam to suit your taste, but it should be thick so that it does not spread out of the pie. It will be tastier if the jam is sour, for example, from cherries, plums or black currants.
STEP 2

Remove the butter from the refrigerator in advance so that it becomes soft. If you cut the butter into pieces, it will warm up faster. To prepare the dough, rub soft butter with sugar.

Then stir in the eggs. To prepare shortcrust pastry, you do not need to take a mixer. All ingredients are perfectly mixed with a wooden spatula.
STEP 4

Sift flour and soda through a sieve and gradually add to the dough. You may need a little more or less flour than indicated in the recipe, so be guided by the consistency of the dough itself. Do not add excess flour. As soon as the dough begins to form into a lump and stops sticking to your hands, there is no need to knead it anymore.

Divide the dough into 2 unequal parts. Place the smaller one in the freezer for an hour to harden.
STEP 6

Line a baking tray (35*35cm) with parchment and spread most of the dough onto it.

Spread the thick jam in an even layer.

Rub the frozen dough on a coarse grater over the entire surface of the pie and press a little with your hand. Place the pie in the oven, preheated to 180 degrees, for 25-30 minutes. Be guided by your oven.

Shortbread dough is prepared very quickly. The finished pie will be a delicious golden color. Remove it from the oven and cool.
