I had noticed this recipe on the Internet a long time ago, but for some reason I continued to prepare my usual zucchini dishes. And so, I got ready and prepared it to show those who have not prepared zucchini according to this recipe. It is preferable to choose young zucchini, but cook from what you have. Expect that you may need 2 zucchini as zucchini sizes and cooking shapes are different for everyone. Let's prepare a vegetable zucchini ring.

    Chop the large onion as finely as possible. Cut the bell pepper into strips.

    Cut the tomatoes into slices 0.5 cm thick. Grate the hard cheese on a grater with large holes.

    In a large plate, mix minced meat, rice, onions, salt, ground black pepper, dry spices (to your taste). Mix well with your hands.

    Peel the zucchini and cut lengthwise into very thin long strips. Cut slowly to avoid getting hurt by the knife. If the zucchini is large and the seeds are large, then when you reach them, turn the zucchini on the other side and also cut to the seeds, turn the zucchini again and cut off the entire zucchini.

    To form a vegetable ring, you need a muffin tin, but I used a regular removable baking tin (d 24 cm) and placed a medium-sized glass in the center. We lay the strips close to each other with the middle part down, and the ends so that they rise above the mold and the glass. Then I added a few more trimmings and salt to the bottom.

    Next add a layer of tomatoes, peppers and green onions. Leave 8-10 tomato slices to decorate the top.

    We wrap the ends of the zucchini towards the middle. If there are gaps in some places, then insert the remaining strips of zucchini with the middle up and the ends down. Then also add salt and rub the salt over the zucchini with your hand.

    Carefully remove the glass. Coat the top and sides with sour cream, lay out tomato slices, green onions and remaining cheese. Place in an oven preheated to 200 degrees and bake for 1 hour 30 minutes. If the cheese browns too early, cover with foil.
