STEP 1

How to make lean and vegetarian vegetable cabbage rolls with rice without meat? Let's prepare all the necessary ingredients for making vegetable cabbage rolls. Take a thick, not large forkful of cabbage with clean leaves. The remaining vegetables should also be without signs of spoilage.
STEP 2

Rinse the rice thoroughly until the water is clear. Place the rice in a saucepan, add 1:2 water and place on medium heat. Bring to a boil and cook the rice over medium heat for 5-7 minutes until half cooked. Place it on a sieve, rinse and let the water drain completely.
STEP 3

While the rice is standing, let's do the cabbage. Wash the head of cabbage thoroughly and carefully remove 8-9 leaves. Place in a saucepan with water and boil in salted water until soft. This will take approximately 3-4 minutes. If you make a lot of cabbage rolls, then you can go another way. To do this, we put the cabbage in the microwave and cook at the highest power for 5 minutes. Remove the soft leaves and continue to cook in the microwave until all the leaves are removed.
STEP 4

Peel the onion, rinse and finely chop. Pour oil into a frying pan and add onion.
STEP 5

Peel the carrots, wash them and grate them on a coarse grater. Add to the pan with chopped onions.
STEP 6

Wash the bell pepper, remove the stem and seeds, and cut into cubes. Add to the pan with vegetables.
STEP 7

Wash the tomato and cut it into large cubes, add it to the frying pan with vegetables. Fry over medium heat for 7-10 minutes. Transfer the vegetables to a bowl.
STEP 8

Add rice to the bowl with fried vegetables, salt, pepper and mix.
STEP 9

Wash the greens, dry them and chop them finely. Add to the bowl with the future minced meat and mix. You can take any greens you like. I have parsley and dill.
STEP 10

Add tomato paste to the minced meat and mix. If desired, tomato paste can be replaced with your favorite ketchup. Taste it and add more salt if necessary.
STEP 11

Turn on the oven to warm up to 180 degrees. Cut off the hard part of the cabbage leaves and beat it a little with a kitchen hammer.
STEP 12

Place about 2 tablespoons of minced meat on the edge of the leaves, depending on the size of the leaf.
STEP 13

Wrap the filling in a cabbage leaf, tucking the edges.
STEP 14

Pour water into a bowl, add tomato paste, salt and pepper. Mix everything.
STEP 15

Place the cabbage rolls, seam side down, in a baking dish and pour in tomato sauce.
STEP 16

Place in a hot oven and cook for 40-50 minutes until done.
STEP 17

Remove the cabbage rolls from the oven and serve immediately. Bon appetit.
