    How to make lean and vegetarian vegetable cabbage rolls with rice without meat? Let's prepare all the necessary ingredients for making vegetable cabbage rolls. Take a thick, not large forkful of cabbage with clean leaves. The remaining vegetables should also be without signs of spoilage.

    Rinse the rice thoroughly until the water is clear. Place the rice in a saucepan, add 1:2 water and place on medium heat. Bring to a boil and cook the rice over medium heat for 5-7 minutes until half cooked. Place it on a sieve, rinse and let the water drain completely.

    While the rice is standing, let's do the cabbage. Wash the head of cabbage thoroughly and carefully remove 8-9 leaves. Place in a saucepan with water and boil in salted water until soft. This will take approximately 3-4 minutes. If you make a lot of cabbage rolls, then you can go another way. To do this, we put the cabbage in the microwave and cook at the highest power for 5 minutes. Remove the soft leaves and continue to cook in the microwave until all the leaves are removed.

    Peel the onion, rinse and finely chop. Pour oil into a frying pan and add onion.

    Peel the carrots, wash them and grate them on a coarse grater. Add to the pan with chopped onions.

    Wash the bell pepper, remove the stem and seeds, and cut into cubes. Add to the pan with vegetables.

I prepared a light dinner - vegetable cabbage rolls with rice without meat. This is a simple and budget option. I disassembled the head of cabbage using the suggested method: I separated the leaves and boiled them in boiling water. The time depends on the stiffness of the cabbage, it took me about 5 minutes each batch. I used rice “for pilaf”; it turns out both crumbly and juicy. I added it to the fried vegetables along with green onions. I took bell peppers and tomatoes from the freezer. The filling turned out to be tender with a sweetish taste of pepper and carrots. The formed cabbage rolls were placed in a glass dish and poured with tomato sauce. At the end of baking, I poured the remaining sauce over the cabbage rolls for juiciness. By the way, the sauce has become thick and tastes very similar to ketchup! The whole family loved the delicious cabbage rolls!

I also make cabbage rolls without meat, I just add diced zucchini, cheese, or lean ham to the filling. The cheese melts during cooking, mixes with rice and other ingredients and turns out tasty and very tender. My husband, a meat eater, simply adores them.

That’s when the aroma from childhood began to spread through the kitchen - a delicacy that for some reason was so rarely served at the table. I prepared 6 cabbage rolls, and put some in the freezer. Thanks for the recipe and idea. Despite the fact that I love this dish, I cooked them for the first time in my life. I learned how to prepare cabbage leaves for filling. Now I’m thinking - shouldn’t I make stuffed peppers without meat?
