Variegated potatoes with onions and carrots

STEP 1

We will need: potatoes, onions, carrots and vegetable oil... and salt to your taste. Oh, sorry, the salt ran off from the photo.
STEP 2

First, wash the potatoes and set them to boil in their skins. If you prepare this dish in the future, you can cook the potatoes in advance, for example in the evening. This will reduce the cooking time by almost half. While the potatoes are cooking we can continue...
STEP 3

Peel onions and carrots
STEP 4

Now we take a frying pan, a grater and grate the carrots directly in the frying pan. Then add vegetable oil and put it on gas, the light is the smallest. The carrots should be slightly fried. I think by this time the potatoes have already been cooked. They need to be drained and cooled.
STEP 5

Chop the onion coarsely and add it to the frying pan with the carrots.
STEP 6

Mix the onions and carrots in a frying pan and leave on low heat.
STEP 7

Our potatoes have already cooled down, or almost cooled down, and we are peeling them. By the way, you can stir the onions and carrots once. Moreover, if the potatoes turn out to be almost boiled, it doesn’t matter: then they will “get ready” in the frying pan.
STEP 8

Now we take the potatoes and shred (cut) them directly into the frying pan into the onions and carrots, then mix everything and add salt to taste. Simmer over medium heat for 5 or 7 minutes. Don’t forget to stir periodically. I hope the photo shows that I shapelessly cut approximately identical pieces from a whole potato.
STEP 9
