  1. STEP 1

    STEP 1

How to make unleavened dough for pies? Prepare all products according to the list. Take premium flour, eggs - C1 or C0. Instead of kefir, you can use sour milk or any other fermented milk drink. Remove kefir and eggs from the refrigerator 1-1.5 hours before cooking. For best baking results, ingredients should be at room temperature.

  2. STEP 2

    STEP 2

Wash the eggs with soap and dry with a towel or napkin. Take a deep bowl in which it will be convenient to beat eggs and mix liquid ingredients. Beat them with sugar and salt. There is no need to whip until foam appears. Adding salt improves the taste and simplifies the whipping process.

  3. STEP 3

    STEP 3

    Add kefir and stir.

  4. STEP 4

    STEP 4

Melt the butter and cool to room temperature. When it cools, pour it into the egg-kefir mixture. Mix well.

  5. STEP 5

    STEP 5

Take a deep bowl with a rounded bottom, in which it is convenient to mix dry and liquid ingredients and knead the dough. Mix half the amount of flour and baking soda required in the recipe using a whisk. This is necessary so that the soda disperses through the flour and the dough rises evenly during baking. Sift the flour so that it is saturated with oxygen and the dough is fluffy.

  6. STEP 6

    STEP 6

Make a well in the flour and pour in the liquid ingredient. Be sure to add the liquid component to the dry component, and not vice versa. This way the dough will be the most successful. Start kneading the dough with a spoon or spatula.

  7. STEP 7

    STEP 7

When the flour in the bowl runs out, add the remaining flour in small portions until you reach the desired consistency.

  8. STEP 8

    STEP 8

When it becomes difficult to knead with a spoon, start doing it with your hands. Knead the dough thoroughly. It is important that it turns out very tender. Otherwise, the taste of the baked goods will be spoiled.

  9. STEP 9

    STEP 9

Before using the kefir dough in the oven without yeast, it should sit for 15-20 minutes so that the gluten dissolves and it is easier to work with. Before doing this, cover the bowl with a tight lid, towel or cling film to prevent the dough from drying out. This amount of ingredients yields about 1 kg of dough, from which you can prepare a pie or pies with various fillings in the oven.

The description is simple. But I would also like to see the finished products. How much do they rise and what is the structure? The dough is quite unusual.

I'll try to make a pie with jam. It's a jam day for a friend. I hope to treat you, if anything I’ll write back. I like that the products are affordable

Here is my preparation in front of the oven. The dough is not difficult to work with. The jam was decorated with apple-plum and blackberries. Lattice of flagella. And I sprinkled the bows with the rest of the flour crumbs with sazar and cinnamon. I'm waiting for the result
