Udon with shrimp and vegetables

STEP 1
How to make udon noodles with shrimp and vegetables in sauce? Prepare your food. It’s better to take shrimp that have already been peeled; the process will be faster and easier with them. Both boiled and raw are suitable. The only difference will be in the cooking time. If you have shrimp in their shell, then peel them. Take out frozen shrimp half an hour before cooking - this will be enough time. Remove the beans along with the shrimp if they are not fresh.
STEP 2
Prepare all the vegetables immediately, since then they will be added almost simultaneously. Wash and peel the carrots. First cut it into strips lengthwise and then into strips across.
STEP 3
Finely chop the garlic.
STEP 4
Cut the green onions into rings, leaving some for decoration.
STEP 5
Peel the ginger root and grate it on a fine grater.
STEP 6
Prepare the sauce - mix soy sauce, broth and sugar. Any broth is suitable - meat, vegetable, I diluted a bouillon cube in boiling water.
STEP 7
Heat a frying pan over medium heat, pour vegetable oil into it. At the same time, heat up the water for the noodles. Place chopped carrots and green beans in the oil. Fry the vegetables, stirring, for about 5 minutes. STEP 8
Add shrimp, chopped garlic, onion, ginger to the vegetables, I also added a little hot pepper. Stir. Meanwhile, the water in the pan will boil, add salt and add the udon. Cook it a minute less than the time indicated on the package - the noodles will be ready in the sauce. Pour the sauce into the pan, salt and pepper to taste. Simmer the shrimp and vegetables for a couple of minutes if they are boiled and a little longer if they are raw.
STEP 9
Transfer the udon to the pan and stir. I used a special spaghetti spoon, but you can drain the noodles in a colander. Warm the dish for a couple of minutes under the lid. Please note that udon with shrimp does not take long to cook - seafood becomes rubbery due to long heat treatment.
STEP 10
Serve the udon at the table, you can sprinkle it with sesame seeds and chopped green onions. Bon appetit!
